Borodino bread on beer (bread maker)

Ingredients


Rye flour370 g
Wheat flour250 g
Dark beer
(I take unfiltered, com.t, do not release gases)
350 ml
Salt (I take regular stone)2 tsp
Honey (pre-melt)3 tbsp. l.
Rast. oil (you can olive)4 tbsp. l.
Yeast saf moment2 tsp
Dry kvass
(the composition on the pack contains malt, rye crackers)
4 tbsp. l.
and ground coriander
(as much as anyone can like)
1.5 tsp
pour 100 ml of boiling water for 30 minutes.

Cooking method


  • Some add 2 tbsp. l vinegar for sourness or kefir. I have not tried it, but I will try to write later.
  • I have a Mulinex OW3000 bread maker that does not function as Borodino bread. Therefore, we set the pizza function in the menu (I have No. 6) for 1.30 minutes. When kneading, the dough should be moderately dense and sticky but not spreading into a shapeless mass in a bucket. In the process of many attempts at baking, I realized that it depends on rye flour (sometimes fine and coarse) and the amount of beer. If the flour is coarser (I took a firm fair), then the beer is 350 ml, if fine, then in the process of kneading, just add flour according to Art. l. After the end of the function, we leave the dough in the bucket without opening the lids for about 1 hour (maybe even less you need to look), until the dough rises twice. Then select function 10 from the menu (only baking for 1 hour), weight 1000 g, dark crust. After the pizza function I tried to bake on the main function, the bread did not rise well.

I don't know if it is possible to say that this is a copy of Borodino bread, but I know for sure that this bread tastes better than what is sold in our city. I will try to describe all the subtleties of making bread that I encountered.
