Warm water) 240 ml
Dry yeast) 7 gr.
Salt 6 gr.

Cooking method

  • The recipe is simple, nothing extraordinary, but the bread is delicious. The recipe is not mine, I don't remember where I got it, I just remember that it was some kind of French bakery.
  • Add yeast to warm water, stir and leave for 10 minutes.
  • Add salt to the mixture, 100 gr. flour and stir until pancake dough.

  • Add the rest of the flour and knead in a bowl, then on the table until combined. Until the dough has taken in all the flour. The dough can be quite firm.
  • Form a ball, place in a bowl, cover and rest for 15 minutes.
  • Place on a floured table and knead until smooth, about 10 minutes.

  • Roll into a ball, put in a bowl, cover and leave for 1 hour in a warm place (oven with a light bulb)
  • Take out, knead properly, about 1-2 minutes.
  • Form a ball again and put back in the bowl. Leave it for another 1 hour in a warm place.
  • Place the dough on a floured table and divide into 2 parts. Form small bars approximately 25-27 cm long.
  • Turn the oven on to preheat 230-235 degrees.
  • Place on a baking sheet lined with parchment.

  • Cover with a damp cloth and let stand at room temperature for 45-60 minutes until doubled in size.
  • Remove the fabric. If the cloth stuck to the dough, sprinkle it with water from a spray bottle and wait 15-20 seconds, then carefully remove it.
  • Make longitudinal or oblique cuts on the rolls. Spray the workpieces with water from the spray gun.
  • Bake with steam at 230-235 degrees 25 minutes until golden brown. Cool on a wire rack for about 30 minutes.
  • Ideally, of course, it is better to bake them on a stone, but not everyone has them, so it showed the result from a cold baking sheet. Of course there is a difference.
  • Of course, you can also plant it on a hot baking sheet.
  • It makes a great crisp. For breakfast, for sandwiches, very good.

Today I baked it, though not in the form of baguettes, but in a loaf. Just super, some fantastic crumb, they ate almost immediately. Next time, I'll count it for one and a half serving. Flour put exactly 400 grams, kneaded in a food processor until the dough gathered in a neat lump. It was parted in a multi on the yogurt mode, it rose in 30 minutes very well, and then again, it was raised in shape. Everything is very simple, fast and delicious. I will definitely bake it again, no comparison with store-bought bread, which is also very expensive. Thank you.

Yes, I think it will mix, why not? I kneaded in a food processor with a crochet-kneader, very good, after about 5 minutes the bun was so soft, tender, the dough was not at all tight, maybe the crumb turned out to be so airy. It seems to me that the bars would have blurred on the sheet, I put them in the mold, let them rise in the oven. To be honest, I didn't even read the recipe to the end, I was in a very, very hurry, apologies to the author, believe me, I never do that. I took only the proportions and ran to the kitchen. Just now I read the recipe to the end, but my result struck me on the spot, I repeat: cosmic crumb. It seems to me that if I put in more flour and the dough became steeper to make bars, the crumb would not be the same. No, next time I will try to repeat everything in the same way: both proportions, and knead well, and then let there be loaves. And with yeast everything is fine, just what you need, no smell, no taste. Everything turned out faster and easier for me: kneading, cartoon, form, oven. Thank you.
