Ingredients

Biscuit:
eggs (weight without shell) 240 g
sugar 150 g
wheat flour of the highest grade 160 g
roasted hazelnuts 30 g
butter 25 g
Cream:
condensed milk with sugar 114 g (+ 50g)
water 50 g
yolks 50 g (2.5 pcs)
butter 82.5% 190 g
roasted hazelnuts 30 g
vanilla sugar 1 tsp
Glaze:
chocolate 70-75% 100 g
butter 50 g
Additionally:
apricot jam 2 tbsp. l
cocoa powder for decoration

Cooking method

  • 1Crane cake according to GOSTGrind the nuts in a coffee grinder.
  • 2Crane cake in accordance with GOSTBeat chicken eggs into a bowl, shake, add sugar. Put a bowl with the egg mixture in a water bath and, stirring with a whisk, heat the mixture to 35-36C degrees and completely dissolve the sugar crystals. Remove the mixture from the water bath and beat well.
  • 3Crane cake in accordance with GOSTGently, using a spatula, using folding movements from bottom to top, add flour and chopped nuts into the dough.
  • 4Crane cake according to GOSTCombine a small part of the dough with melted and cooled butter, then gently mix with the dough.

  • 12Crane cake according to GOSTBeat the softened butter with vanilla sugar. Without stopping whipping, add the custard base into the whipped butter. Into the finished cream* add chopped nuts.
  • 13Crane cake in accordance with GOSTPut the first cake on a dish, coat with half of the cream. Lay out the second cake, coat with the remaining cream, cover with the third cake. Put the cake in the refrigerator for one and a half to two hours.
  • 14Crane cake according to GOSTHeat the jam until hot.
  • 15Crane cake according to GOSTGrease the top and sides of the cake. Put in the refrigerator to freeze the jam.
  • 16Crane cake in accordance with GOSTIn a small saucepan, combine butter and chocolate pieces, put on low heat. Warm up while stirring. As soon as the chocolate begins to melt, remove the saucepan from the heat and knead the frosting until smooth. Pour it over the middle of the cake and let it drain freely.
  • Put the cake in the refrigerator until the icing hardens.
  • Using a stencil, apply a silhouette of a crane to the surface of the cake with cocoa powder.

I screwed up from the very beginning. The biscuit didn't rise very much. It is porous, everything is fine (can the diameter of just a nonsingly small one?) And it is clear that the butter biscuit is "heavier" than usual, but it seemed to me. that did not rise well. I had to cut it into 2 cakes. And I also screwed up the frosting because I was too lazy to go for a second pack of butter and there was not enough of it. The glaze is thick and lay down accordingly))).

In short, you need to do it a second time and try to fix your flaws)).
