Canned sprat in tomato

Ingredients

sprat (or small fish), fresh frozen 2.5KG
fresh tomatoes 3 Kg
onion 1 kg
carrot 1 kg
vegetable oil 1 glass
salt 100 g
sugar 200-300 g
tomato paste 0,5 l
spices to taste

Cooking method

  • For this recipe, you can take any medium-sized fish, I did it with a small herring. You can take gobies, but they have a hard ridge, it will be felt.
  • Defrost the fish, cut off the tails and remove the intestines along with the head in one motion.
  • Canned sprat in tomato
  • Wash and peel carrots and onions. Finely chop the onion, grate the carrots on a medium grater. Wash the tomatoes and rotate them in a meat grinder.
  • Then put all the vegetables in a thick-walled saucepan and simmer over medium heat for 40 minutes.
  • Dip the fish in boiling water for a second, I dipped it in a mesh colander. And once I forgot, it didn't affect the taste in any way.
  • Pour vegetable oil, tomato paste into a saucepan, add salt, sugar and sprat. Simmer over low heat for 2 hours, stirring gently regularly. Add spices half an hour before the end of stewing (lavrushka, allspice and black pepper to taste).
  • Put fish in sterilized jars of any capacity and seal in any way. I didn’t wrap it up, it’s just cool.

Recently I was looking for a similar recipe on our forum, but I did not find anything that would make the fish rolled into jars. And for some reason, well, soooo wanted such canned fish! And it is convenient to take to the dacha, and at home such a jar will be useful to pick up. And in the store, such canned food of normal quality is oh, how expensive. you won't buy it, but I don't want to eat. So I took a chance, I dug up this recipe in my bookmarks from other resources.

I didn't buy the sprat, you get bored to clean. We sell a very decent type of frozen herring, so I bought it.
I made canned food 2 times, the first time for 700 g of fish (sample), the second time for 1.6 kg. She cleaned the second batch of herring for exactly 25 minutes, apparently not for long.
Herring was 1.6 kg, tomatoes 1.8 kg, carrots 540, onions 560, the rest was proportional. Just an almost full saucepan in a slow cooker (5 liters). The output is 3.1 liters of ready-made canned food (0.25, 0.3, 0.48, 0.5 liter jars in a quantity of 8 pcs).
Canned food has been in the apartment for 6 days, there are no hints of bloating in any can. Therefore, I decided to share this recipe with you. Fresh tomatoes are still on sale, you can cook.
From the trial batch, we were able to win only one half-liter can from my husband, the rest we ateate and swept the plates with bread !!!

I am making fish according to this recipe for 3 years. I tried it with sprat, capelin, and blue whiting. It always turned out very tasty, and stored without problems without exploding. Only at the end of cooking I always add a little vinegar essence, for reliability. Somehow it was advised to do it with herring, but I didn't like it, boiled herring has too strong a smell.

1. I did not make fish for 2.5 kg, this is a very large portion, I do not have such a pan. I did 700 g of fish and 1.6 kg of fish.
For 2.5 kg of fish, I would put laurel. sheet 6-8 pcs., allspice 10 pieces, ground black about a dessert spoon.
2. The tomato filling is thick, my tomatoes are very fleshy. But in canned food it dominates over fish. If you want more fish in canned food, then you can proportionally reduce the number of all components, except for fish. But then the salt-sugar must also be adjusted to your liking in the saucepan, since the indicated number of products and spices in the recipe is balanced in taste.
