I bought a 5 liter one last week. At first I regretted a little, because I decided to immediately knead a bunch in it (the total weight of the dough is 2500 from 1000 flour). And he began to suffer. Divided into three parts - mixed. But the next day I kneaded bread on one bun and it was too little for him, he did not always hook the dough with the second hook and it wound up on one hook, sometimes he had to take it off
Personally, I had to replace this mixer with a hand mixer, because I recently burned a hand-held stationary mixer and I did not want to buy it either.
So, 10 is still for serious volumes. I won't do large volumes often, you can knead in a couple of steps, but you can't make small ones in 10.
I haven't whipped the whites yet, 2 C0 eggs whipped normally. in the center of the bowl there is a slide, and at the end of the rim a pipette made of wires and takes out everything.
That's just why the bitter mixer has not yet understood. I tried to knead the minced meat up to the walls of the Dalekova, only kneaded it in a bowl, and itself was spinning in the center. Probably he is still for a dense batter, while I don't even think for which one. Maybe you can mix flour into a biscuit, I do it with my hands.

I only have one mixer for 5 liters and with me on you
I just fluctuated between 5L and 10L. At first I regretted, as it seemed to me, but now I am happy.
At the expense of the minimum amount - I can't get to proteins in any way, but I made meringues from liquid from peas (there is a recipe on the cook). So, there was 100 ml of liquid, at the 8th speed I took it out a little, but quickly swung it and in 4 minutes whipped it into a gorgeous foam (you cannot distinguish it from proteins). And whips two whole eggs too.

I make bread every other day, knead normally (1st and 2nd speed). Sometimes it changes the sound (growls a little, like a meat grinder) but nothing terrible happens.
Although it does not heat up, I can withstand 5 minutes of kneading, 10 minutes of rest, as written in the instructions.
