Ingredients

almond flour 30 g
honey 40 g
egg 40 g
yolk 40 g
olive oil 25 g
protein 75 g
sugar 40 g
sifted flour 35 g
pistachio paste 1 tsp
food coloring green
chopped nuts (pistachios) 15 g
For ganache
maximum fat cream 150 g
dark chocolate 160 g
For decor
White chocolate / glaze
fat-soluble dye
whipped cream 100 g
pistachio paste
strawberry flavor enhancer
green dye
fresh berries

Cooking method

  • I spied on the mushrooms in IG, looked at it for a long time and, since there was no recipe, began to reinvent the wheel.
  • 1. Let's start with the tart. In a K-paddle mixer, all Dry Ingredients are mixed. Add the diced butter, when crumb forms, add the egg, vanilla and water. Knead the shortbread dough. We wrap it in foil and send it to the refrigerator for half an hour. After the expiration of time, roll out 2-3 mm thick and put in a mold. Press down firmly and prick the bottom with a fork. We put it in the freezer. Preheat the oven to 180 ℃ and put the frozen dough there in a mold, bake for 15-20 minutes.
  • Cool, or better freeze.
  • 2. Now the biscuit. I start to do it when I put my expenses in the oven. Beat the protein and sugar into a soft meringue. Beat almond and pistachio flour, pistachio paste, honey, dye, eggs + yolks and olive oil with a mixer, for 5-6 minutes. Gently stir in the whites, sift the flour on top and mix gently again.
  • Place on a tray covered with a silicone mat and level with a pallet. Sprinkle with chopped nuts. Put in preheated to 200 ℃ for 5-6 minutes. Remove, cool and cut a little smaller than the size of the tart.
  • 3. Ganache. Heat the cream almost to a boil and pour over the chocolate. Stir well and pour into frozen tarts 3/4 high. Put a biscuit on top immediately. Refrigerate.
  • 4. Decoration. We'll need to melt the white chocolate or frosting and add the red fat soluble color to the desired color and the strawberry flavor enhancer. Save a teaspoon of white chocolate for dots. Pour red chocolate into a pastry bag and place flat cakes on parchment. Make dots on them with white chocolate. Put in the refrigerator.
  • Divide the cream into two unequal parts. In the smaller one add pistachio paste and dye (the color should be as close as possible to the biscuit). Decorate the grass with a nozzle - mask the joint between the biscuit and the tart. Sediment the mushroom legs from the round nozzle with regular cream and put the caps on top. Scatter berries in a picturesque mess.

The recipe itself is arbitrary, the author had chocolate and pistachio biscuits smeared with ganache and mushrooms on top (well, these are all my assumptions). And all this splendor is in the midst of scattered forest berries. I fell in love and changed my recipes for myself. I think in the original, instead of cream, there was a more refined cream (Chantilly?), Well, and real tempered white chocolate.
