Layered bagels with cream cheese

Ingredients

Wheat flour 130 g
Salt pinch
Sugar 7 g
Cold butter 85 g
Ice water 50 g
Cream cheese 120 g
Egg for coating
Sesame seeds for sprinkling

Cooking method

  • Dear friends, this is puff pastry that I have not promised yet. And, let's say, some preview of it
  • Faster, less labor intensive and cheaper option.
  • But the technique used is very similar, helping to achieve more layers in the chopped dough.
  • Therefore, I will call this dough layered.
  • Crispy little bagels sprinkled with sesame seeds and soft cream cheese inside.
  • One bite tea cookies. Snack cookies. Just delicious cookies.
  • From this amount, 16 baby bagels are obtained.
  • Layered bagels with cream cheese Sift flour, salt and sugar into the bowl of a food processor or food processor. Stir to distribute sugar and salt in flour.
  • Layered bagels with cream cheeseCut the very cooled butter into cubes or small pieces. We spread it on top of a dry layer.
  • Layered bagels with cream cheeseWe start the motor until a large crumb forms.
  • Layered bagels with cream cheese We measure the water in a separate container. With the engine running, gradually pour in water until a dough forms.
  • Layered bagels with cream cheese We spread the dough on the work surface, quickly shape it into a rectangle. We wrap it in foil and send it to the refrigerator for at least 30 minutes.
  • Layered bagels with cream cheeseRoll out the dough into a 25x40 cm rectangle on a floured work surface.
  • Layered bagels with cream cheese We make a quadruple fold: on the short side, fold the edges to the center (central horizontal axis)
  • Layered bagels with cream cheeseAnd now, along this central line, bend the dough in half.
  • Layered bagels with cream cheese We make a triple fold along the short side: put the left third of the dough on the central second third.
  • Layered bagels with cream cheeseCover the top with the right third. Turn the seam down. The dough is ready for further work.
  • Layered bagels with cream cheeseRoll out the dough into a circle with a diameter of 26-27 cm.
  • Layered bagels with cream cheeseWe divide the dough into 16 parts-sectors - our future bagels. We spread the cream cheese on the wide end of each sector.
  • Layered bagels with cream cheeseWe roll the bagels, starting at the wide edge.
  • Layered bagels with cream cheese We spread the bagels on a baking sheet and send them to the refrigerator for 15-20 minutes to harden.
  • Layered bagels with cream cheeseGently coat each bagel with an egg and sprinkle generously with sesame seeds.
  • Layered bagels with cream cheese We bake in an oven preheated to 200C for 20 minutes.
  • Layered bagels with cream cheeseCool on the wire rack
  • I say it bluntly - it's delicious!
  • You can perfectly bake such bagels with any other filling, including sweet ones. Just take a thick filling so that it does not leak out and burn during the baking process.

Claaass. With sugar ...
Stored up to 5 days in the refrigerator, unlimited in the freezer.

Olga, beautiful bagels-snacks! And special thanks for the dough! You also need to make a reserve. Is it still a bit layered as well?

Olga, I love bagels, but I'm unlikely to cook with cheese. Thanks for the recipe 🔗 While in a piggy bank.
