Spicy pressed roll

Ingredients

Boneless pork belly 1 kg
Minced meat 300 g
White bread 60 g
Bulb onions 1 PC
Garlic 1 tooth.
Sausages 2 pcs
A little vegetable oil
Salt, ground black pepper to taste
Lemon 1/2 pc

Cooking method

  • 1.
    Spicy pressed rollIdeally, the meat for the roll is the same thickness, and the piece itself is rectangular.
  • 2.
    Spicy pressed rollflatten the meat (cut, leaving one edge intact, it turns out like an open book), beat off thinner, grate with lemon, salt and pepper generously on both sides. Leave to marinate for a couple of hours in the refrigerator.

    Spicy pressed rollMix the minced meat, grated onion and garlic, soaked and squeezed bread, salt and pepper until a homogeneous and smooth mass. Let it brew for 1 hour.
  • 4.
    Spicy pressed rollStepping back a little from the edge of the meat layer, line the filling with a slice along the entire length and drown the sausages in it.
  • 5.
    Spicy pressed rollRoll the meat into a roll. You can fix the sides and edges of the roll with toothpicks or special pins for meat, you can tie it with twine. I have a special net for rolls, if you manage to get it, you can use the method that I will describe below. Cut off the bottom (10-12 cm) of a plastic bottle with a capacity of 1.5 liters, the length of the net should be equal to the length of the roll + a couple of centimeters in order to fix the edges.

    Spicy pressed rollgrease the bottle inside with oil, and pull the net from the side of the neck. Place the roll in the bottle from the side of the cut bottom.
  • 7.
    Spicy pressed rollMove the net towards the cut-off bottom and fix the knot, when the neck of the bottle comes out from the other side of the net, pull the bottle by the neck and leave the roll in the net. We fix the second edge with a knot.
  • 8.

    Spicy pressed rollCover the bottom of the heat-resistant form with baking paper and place a roll greased with vegetable oil in it. Close the form tightly with a roll of foil. Bake in an oven preheated to 200 "C for 1 hour. Remove the foil and let the roll brown.

    Spicy pressed rollRelease the still hot roll from the net by cutting it along the entire length of the roll.
  • 11.
    Spicy pressed rollWithout removing the roll from the sauce that formed during frying (the roll will not be dry), cover it on top (I used the taper cover) and put the load. Leave the roll under load for 6-7 hours, then place in the refrigerator and allow to harden well.

Girls, I once bought a net in a pharmacy for similar purposes for boiled pork, but the net has such a notorious medicinal smell that I did not risk it. Share your experience, please, how you choose this mesh.
