French potato salad

Ingredients

potatoes* 1 kg
dry white wine 4 tbsp. l
wine vinegar** 2 tbsp. l
mustard 1 tsp
salt 1/4 tsp
olive oil 6 tbsp. l
green onions or shallots 1-2 tbsp. l
parsley or other spicy herbs 2-3 st. l

Cooking method

  • French potato saladBrush the potatoes well.
  • French potato saladDip in boiling salted water and cook until soft. Drain the water.
  • French potato saladCool the potatoes slightly so that they can be picked up. Peel.
  • French potato saladCut the potatoes into approximately 0.3 cm slices.
  • French potato saladPour wine over the warm potato slices and shake the bowl. Set aside to allow the potatoes to absorb the wine.
  • French potato saladFinely chop the onion.
  • French potato saladMix the vinegar with mustard and salt until the salt dissolves.
  • French potato saladStir in the oil dropwise.
  • French potato saladSeason the dressing to taste and add green onions or shallots.
  • French potato saladDrizzle the dressing over the potatoes and mix by shaking the bowl.
  • French potato saladServe the salad warm or cold. Sprinkle with herbs before serving.

Note

The recipe for "French Potato Salad" (Pommes de Terre a l'Huile) is taken from Julia Child's book "French Cooking Lessons" v.1 Literally, the name translates as "Potatoes in oil", which is quite true.
* potatoes for salad are better to use non-crumbly varieties (waxy), of course this will not affect the taste, but the salad will look more presentable. This I have now learned.
** The type of vinegar is not specified in the recipe, but white will look more aesthetically pleasing. I used red because there was simply no other, and my potatoes were originally red.
