Rice cookies Delicate

Ingredients

- Wheat flour 300 g
- Rice flour 75 g
- Butter 270 g
- Powdered sugar 75 g
- Salt 1/4 tsp
Lemon glaze:
- Powdered sugar 150 g
- Lemon juice 1 tbsp. the spoon
- Water 1 tbsp. the spoon
- Butter 10 g
- Dark or Milk chocolate 60 g

Cooking method

  • Beat the softened butter with salt and powdered sugar.
  • I beat with a silicone spatula until it was smooth, smooth and airy. (the recipe says to beat with a mixer ... but then I imagined how to pick this butter out of the corollas ... brrrr ... with a spatula it turned out great!)
  • Add sifted flour - both wheat and rice.
  • Collect the dough, crush it a couple of times so that it becomes homogeneous.
  • Shape into a ball.
  • Wrap in plastic and refrigerate for 30 minutes.
  • Then, on a well-floured surface, roll out a 5 mm thick layer, cut out the cookies we like, onto a baking sheet and into the oven!
  • I baked on convection 170 degrees, 13 minutes ...
  • Look around your oven ...
  • Until light cream color ...
  • We take out and cool on the wire rack.
  • In the meantime, we make the glaze ...
  • Put all the products for icing (well, except for chocolate) in a cup and grind well!
  • We put the icing on the cookies. I applied with a spoon and immediately smoothed it out.
  • Melt the chocolate in a water bath or in the microwave (at low power, 30 seconds each ... so as not to overheat)
  • We put a confectionery in a bag and paint.
  • And who does not have a bag - you can just pour stripes from a spoon!
  • That's all!
  • The cookies melt in your mouth! It's even scary to hold it - it crumbles right in your hands! ... so tender !!!
  • My all were delighted !!!

The book says - 2 tablespoons of juice. 1 tablespoon of water and 20 g of oil ...
I put only 2 tablespoons of juice and butter and it has already become normal, that is, the water did not fit anymore ... and the glaze turned out to be a little sour - so I corrected it here! ...
And it did not become transparent !!! So white and remained !!! But it did not completely dry out (they finished eating in the morning)!
Therefore, I wrote butter 10 gr ...
It turns out 20 is too much!
These are just my conclusions already - after all, it freezes instantly without oil! Sometimes I don't have time to finish the cakes, it doesn't drain anymore ...
Therefore, I decided that 20 grams is too much! You need a little oil here ...
