Rum women on sourdough

Ingredients

OPARA:
Psh sourdough. 100% hydration 50 g
Wheat flour 175 g
Water 100 ml.
DOUGH:
Opara all
Eggs 3 pcs.
Wheat flour 400 BC
Milk 125 ml.
Sugar 170 g
Butter 150 g
Salt 1 tsp
Vanillin option
Raisins 100 g
SYRUP:
Sugar 100 g
Rum (cognac or other alcohol) 3 tbsp. l.
Water 130 ml.

Cooking method

  • Knead the dough. Put in heat for lifting.
  • As soon as the dough comes up, we start kneading the dough.
  • The dough is quite liquid. I knead it with scrapers like a ciabatta.
  • I heat the oil in the microwave to melt. I spread the eggs with a fork in advance. I sift the flour. I sort out the raisins, mine, dry them and roll them in flour. I warm up the milk.
  • I put the dough into the dough, pour warm milk and stir with a whisk until a homogeneous emulsion is made.
  • I add all the other ingredients for the dough. stirring.
  • I add flour last. And I make a batch.
  • The dough is slightly thicker than the pancakes.
  • I put it in the heat for fermentation. When the mass doubles in volume, the dough is ready.
  • I grease the molds and lay out the dough with a spoon (no more than 2/3 of the mold volume)
  • I put it back in a warm place for proofing.
  • I bake in an oven preheated to 180 * C - 30-35 minutes.
  • Depends on the nature of the oven.
