Ingredients

Cooking method

  • I knead the dough with the hook in the cache 2 times.

  • Take out the dough and roll into a ball. The dough will be dry. But it normal.
  • Place the dough in a saucepan and cover. I put it on the table and cover it with a basin.
  • After a few hours, you will have a soft, chic dough that, when rolled, will not require adding flour.
  • I roll it out on a dough roll.
  • I take a piece of dough. With my hands I make a rectangle with such a height that I can get into the dough roller. 3-4 times for 2, then 3-4 times for 5 and 2 times for 7. Add 1 tbsp of cold water to the minced meat and begin to knead well, gradually adding as much water as the minced meat will take. I stir in the cache with a spatula and immediately add 1.5 cups. While the rolling is spinning, the minced meat is constantly mixed. Take a circle of dough and put minced meat on it. I put half a tablespoon on top. Take the edge of the dough in front of you with your right hand. Hold the edge of the dough between your thumb and forefinger. The thumb is inside, and the index is outside. With your left hand, bring a piece of dough, folding it like an accordion and pinching it between the thumb and forefinger of your right hand. Do not remove your right hand from the test So gradually go in a circle and pinch the tail. The more folds you get, the better. Take the finished khinkalina carefully by the tail and put it in a small bowl with flour and put it on a tray. If you do not cook immediately, place the tray in the refrigerator as it fills. Khinkali can be frozen like dumplings. Use a large saucepan for cooking. Pour cold water, add salt when it boils. Approximately 2 tsp of salt per liter of water. Lower the khinkali with their tails down into boiling water with a slotted spoon. But do it quickly so that the khinkali are cooked at the same time. Once the water boils again, schedule a time. Cook for exactly 10 minutes. After 10 minutes, pour a glass of cold water into a saucepan. Then the finished khinkali will not stick together. As soon as the water boils again, place the khinkali on a large dish or tray, sprinkle with black pepper. Place a glass of cold beer next to it and enjoy the result of your hard work.
