Ingredients

boiled chicken 300 g
potatoes 2 pcs
carrot 2 pcs
pickles 200 g
canned green peas 200 g
vinegar 1 tbsp. l
salt taste
For mayonnaise filling:
olive oil 400 g
chicken eggs 3 pcs
lemon 1 PC
mustard dijon 1 tsp
sheet gelatin 10 g
salt taste
olive oil for gelatin 2 tbsp. l
For filing:
quail eggs 10 pieces
capers, greens taste

Cooking method

  • "Olivier" in many countries is called Russian salad and is sold in supermarkets. There it differs significantly from the familiar "Olivier" and contains those ingredients that do not exist in ours, for example, green beans.
  • The recipe for this "Russian" salad is an exception - everything is like ours, only it is designed in the form of a terrine. This gives "Olivier" festivity and makes it very convenient to use (the salad keeps its shape and does not "flow" during the meal).
  • Russian salad Olivier First of all, we prepare our mayonnaise. To do this, mix all the ingredients at once.
  • Russian salad OlivierUsing an immersion blender with intermittent inclusions, immersing it to the very bottom, we begin to beat. We do this for a couple of minutes.
  • Russian salad Olivier Next, raise the blender's leg with the same intermittent movements to the very top and lower it down. All preparation takes up to 5 minutes.
  • Russian salad OlivierDice the peeled carrots and potatoes. We boil them separately: potatoes in water with 1 tablespoon of vinegar (so that it does not darken), and carrots in plain water.
  • Russian salad OlivierSoak gelatin in cold water.
  • Heat (no more than 80 * C) 2 tablespoons of olive oil, cool. After 10 minutes, squeeze the gelatin and add to the cooled olive oil, and then mix with mayonnaise
  • Russian salad Olivier Cover the prepared form for terrine salad with cling film completely from all sides and remove to cool in the refrigerator for at least 15 minutes.
  • Russian salad OlivierCut the cucumbers into cubes and let the excess liquid drain.

  • Russian salad OlivierFill the mold with salad, fill the top with the remaining mayonnaise filling and tighten the mold with plastic wrap. Put it in the refrigerator for at least 5-6 hours.
