Bellini cocktail

Ingredients

Peaches 2 pcs.
Sugar (I have muscovado) 25 grams
Cognac (or Grappa) 15 ml
Sparkling dry wine (Prosecco)

Cooking method

  • Bellini cocktailCut the peaches in half and remove the pits. I additionally peel the peaches, firstly, because now I come across just "wooden" imported peaches, and secondly, I do it even in season, so as not to rub them through a sieve later.
  • Place the peach halves in a baking dish.

You can make derivatives of this cocktail - Bellini Mango and Melon Bellini. Tasty in any combination.

Yulia, peaches are baked in order to grind them manually (without electric appliances) into a homogeneous gentle puree. Raw peaches, even very ripe peaches, will give fiber. Therefore, they are baked in order to destroy these bonds in the pulp.
