Ingredients

Dough:
Flour

Cooking method

  • We make the dough in a sponge way (the finished dough should NOT be thick). Fill 2/3 of the molds with dough, let them come up again and bake.
  • We make icing from proteins and icing sugar (1 protein + 1 glass of powder), or you can make icing sugar.
  • For impregnation, cook syrup 1 glass of sugar + 1 glass of water + rum essence.
  • It turns out:
  • 10 big rum babes, or if not soaked but simply sprinkled with powdered sugar - cupcakes.

Note

Girls suggest a recipe for cupcakes and babes (2 in one). Optionally, you can eat it like cupcakes, or soak it, cover it with icing, and eat it like rum babas.

2. Pour all the milk into a bowl, add yeast, and enough flour to be like thick sour cream. Put until it increases in volume three to four times (40 minutes, depending on the yeast, I have Lviv yeast).
3. Beat the yolks with the remaining sugar.
4. Melt the margarine until liquid but still white.
5. Soak the raisins, then roll them in flour before placing them in the dough.
6. In our matched dough, pour in the mixture of yolks, and mix by gradually adding sifted flour, until medium consistency.
7. Pour in the margarine and knead until the dough takes all the margarine.
8. Pour in the raisins and mix gently until the raisins are evenly distributed throughout the dough.
9. We put in a warm place for about an hour.
Then in pre-greased and floured muffin tins, place the dough 2/3, let go to the edge of the mold and in the oven 180 degrees, until tender.

And I soaked the grandmother like this: I cooked the syrup, or rather brought it to a boil and let it boil for a couple of minutes. Then she poured it into a deep bowl so that the syrup was somewhere up to half, and lowered each grandmother there - for ten seconds. Then, when all the grandmothers are soaked (they absorb the syrup pretty quickly), spoon the remaining syrup onto each grandmother. The amount of impregnation can be controlled, the longer you keep the grandma in the syrup, the juicier and heavier it will be. If there is not enough syrup, you can add it.

Any form will do, so what if it's small, keep it in less syrup so that it doesn't become sour - it will still be tasty.

I can suggest another way to soak the rhombuses inside - you need to prick them in several places with a toothpick! Then the syrup is well poured into the holes and soaks from the inside, and the holes themselves are not noticeable, since the toothpicks are thin.

But mine are perfectly soaked, a little overexposed in syrup and may even "sour", that is, it will be too soaked, wet.

Only reduced the quantity of yeast by 2 times and increased the quantity of margarine by 2 times. Flour took 550 grams and 50 grams of starch.
The dough was enough for 9 molds, which are made from cans of condensed milk (I bake Easter cakes in them)
The dough rises very well, so you only need to put half of the dough.
Syrup prepared 2nd serving. I made the first one (1 glass of sugar + 1 glass of ox + 30 grams of rum) and I had to cook the second one. Very well absorbed.
The dough is very sweet. I think I'll take less sugar next time.
