Tropical Mix Cake

Ingredients

Chocolate dacquoise
egg whites 140 gr (about 4 pieces)
almond flour 90 g
cocoa 20 g
wheat flour 30 g
sugar 50 g
powdered sugar 90 g

passion fruit puree 200 g
mashed mango 200 g
Apple 1 average
hazelnut 50 g
sugar 50 gr + 1 tbsp. l.
gelatin 11 g
Chocolate muss

milk 200 g

dark chocolate 200 g
cream 33% 350 g
gelatin 15 g

Cooking method

  • They say we have princesses abroad. I thought, I thought, what to treat dear guests to. Let me, I think, I will surprise them with their signature euro dessert. Yes, and I'll try my hand, whether it's a joke - authentic dishes for carriers language culture to suggest.
  • Well, let's get started.
  • We, as usual, need two forms of 22 and 20 cm. Well, don't waste time on trifles, there are a lot of guests, we will have a great cake!
  • Tropical Mix CakeLet's make a nut dacquoise. To do this, separate the proteins from the yolks (we still need the yolks) and beat until strong, stable peaks. Introduce sugar in three steps, continuing to beat. In a separate bowl, mix well both types of flour, cocoa and icing sugar, sift the loose mixture so that there are no lumps. We introduce it into the proteins and mix with a spatula with movements from bottom to top. In detail about how to properly prepare dacquoise, I told HERE
  • Tropical Mix CakeWe spread the dough on a baking sheet covered with parchment in a smaller diameter. The easiest way to do this is with a pastry bag. We bake dacquoise in a preheated oven at 180 degrees for 15-20 minutes. Cut the warm cake in shape.
  • Tropical Mix CakeIt's time to plunge into the tropical breeze. But this time we will make not just jelly, but a compote with a surprise. Let's prepare a surprise. Warm the hazelnuts in a dry frying pan for 5-7 minutes, this will give us the opportunity to easily peel it off. We cut each nut in half and send it back to the pan. Sprinkle with 1 tbsp. l. sugar and mix thoroughly until the sugar melts. This is how we caramelize the nuts so that they are not damp in the fruit mass.
  • Tropical Mix CakePut the mango and passionfruit puree in a saucepan. I use frozen Boiron puree. Pour in sugar and bring to a boil. While the mass is boiling, peel the apple and cut it into small cubes. We send the apple in mashed potatoes and boil for just a couple of minutes. We want the apple cubes to simmer a little, but not boil down and turn into a puree. Let the mass cool to 45 - 50 degrees and add the previously soaked and squeezed gelatin into it, mix thoroughly. In this recipe I use Silver Leaf Gelatin, which has a strength of 160 blooms. If you have a different gelatin, recalculate the required amount, using the table I will give in the notes
  • Tropical Mix CakePour the mass into a smaller mold, add the nuts, distribute them evenly. We send the compote to the freezer for 3-4 hours.
  • Tropical Mix CakeWhen our compote is completely frozen and the dacquoise has completely cooled down, we proceed to the mousse. Grind the yolks (the same ones from the first point) with sugar, add flour and mix thoroughly. Pour in milk and cook the cream in a water bath until it thickens or, like me, in a microwave for 3 minutes. Every minute we take out the bowl and mix the cream with a whisk.
  • Tropical Mix CakePour chocolate into the finished hot cream and mix quickly until smooth. If at this stage you stir or stir with a mixer, the mass will stratify. If you are afraid that you will not succeed quickly and thoroughly, then it is better to cool the cream, melt the chocolate separately and combine both masses. In a separate bowl, beat the cream until stable peaks and add it to the cooled chocolate cream in three stages, stirring with a spatula. The temperature of both mixtures should be approximately the same. Stir in the presoaked and squeezed gelatin
  • Tropical Mix CakeAssembly. Pour 1/2 mousse into a large mold.We put the form with mousse in the freezer for 5 minutes so that it grabs and the next layer does not fall to the bottom. Put the compote on top, pour out the second half of the mousse. Now you do not need to put it in the freezer, because the compote is ice cold, and the mousse will immediately solidify. We spread the sponge cake and slightly melt it in the mousse. The surfaces should be leveled. We put the cake in the freezer for at least 6-7 hours
  • Tropical Mix CakeThe finished cake can be covered with mirror glaze or choco velor. I covered with glaze. To do this, we release the cake from the mold and put it on the jar. There should be a container under the jar to collect the dripping glaze.
