Ingredients

Minced duck 400 g
Homemade noodles 150 g
Lentils red 40 g
Turnip onion 1 PC
Carrot 1 PC
A tomato 2 pcs
Zira, paprika, black pepper

Cooking method

  • We make noodles according to your favorite recipe (preferably with a semolina content of at least 30%) or take ready-made ones. Boil for five minutes in boiling salted water and rinse under cold water until it cools. This procedure washes the flour off the homemade noodles and prevents the noodles from turning into porridge in the future.
  • Remove the meat from the duck thigh and roll it in a meat grinder. Salt, pepper, two squirrels and knead for about five minutes until the very first "strands". We moisten our hands with cold water and form meatballs. It is advisable to put them in the refrigerator for 40 minutes.
  • Next, we do a standard overcooking (you can just throw vegetables into the water, but it's not so tasty for me)
  • From onions, carrots and tomatoes. I do not advise adding bell pepper, it interrupts the duck aroma.
  • Pour lentils and overcooking into boiling water, let it boil for 5-7 minutes, then take a tablespoon, put it in a glass of cold water and put a meatball on a spoon. Put it in the soup and raise it up and down a couple of times. And so with every meatball. This ensures that they don't stick to the bottom of the pot.
  • When the meatballs have surfaced, add our cold noodles. I always add a full teaspoon of cumin to this soup, which I grind in a mortar.
  • In 5 minutes our soup is ready)

Note

This is one of the most fragrant soups, even though it is cooked in water.
If you are too lazy to remove meat from the thigh, buy a fillet and roll it along with the skin, otherwise it will be dry.
