Water 90 g
Wheat flour 90 g
Fresh yeast 1.5 g
Main dough
Pulish whole
Fresh yeast 3.5 g
White malt (honey is possible) 7 g
Salt 9 g
Wheat flour 260 g
Cold water (10 degrees) 110 g

Cooking method

It has been a long time since there was such a Battle in my house because of baking. The first time I baked one and a half norms (12 pieces) they were gone in 4 minutes !!!! Today, two days later, I baked a triple rate (24 pcs)
Of these, 14 with marmalade and 10 with mozzarella and sun-dried tomatoes.

For Pulish - we dilute the yeast in water, add flour and leave at room temperature for 12-15 hours (I stood for 9 hours in the kitchen on the table and 10 hours in the refrigerator)
For the main test We dilute the yeast with water and add all the pulish and the rest of the ingredients. kneading at low speed for 5-7 minutes, then increase the speed and knead for another 5 minutes (I kneaded dumplings in HP on the program)
After kneading, let the dough rest for 30 minutes and divide into 8 blanks, 70 grams each

Roll up into a ball, cover with a film or bag and leave for an hour and a half.

The next step is molding.
Roll out the dough ball thinly. Then you need to roll up with tension. we pull out the far end with our left hand, and with the base of our right palm we twist our wand.
We put the resulting sticks on a baking sheet, you can slightly bend the edges, giving the shape of a bagel.

I made half of it with my apple layer marmalade, which my sweet-tooth households were incredibly happy about.

Cover the formed sticks with foil and send them to the refrigerator for three hours. (I put it on the loggia)
Before planting in the oven, the sticks can be sprinkled with water and sprinkled with coarse salt or sesame seeds. I greased the yolk / water and sprinkled the sweet with poppy seeds, and the salted sesame seeds.
Bake at 250 g for the first 10 minutes with steam, then lower the temperature and bring them to readiness for another 10-15 minutes.

Note

If you have a day off, then in the evening you can spend 10 minutes on pulish, and in the morning you can knead the dough. All stages are quite long, but they don't require much of you. The result is definitely worth it.
