Condensed milk cupcake

Ingredients

flour 100 g
corn starch 20 gr.
egg 4 things.
thickened. milk 380 gr.
butter 50 gr.
baking powder 1 tsp
vanilla sugar (I don't put it, it turns out very sweet) 1 sachet

Cooking method

  • Thicken. Mix milk and eggs at low speed with a mixer.
  • Add melted butter, stir again.
  • Sift flour mixed with starch and baking powder into the resulting mass, add vanilla sugar and mix again.
  • Pour the dough into a greased and floured dish. Bake in an oven preheated to 150 degrees until dry. Baking time in the recipe 35 min. , but I have this cupcake baked for 50-55 minutes, so be guided by your oven.
  • Cool the finished cake in a mold for 10 minutes. , then take it out and cool completely. Sprinkle with powdered sugar.

Note

If there is no cornstarch, then add flour to this amount.

glad, baked a muffin in a muffin bowl GFW-025, took 0.75 of the norm, there was only potato starch and still added a spoonful of starch, since the dough was very liquid, I was afraid that it would not have time to bake in the muffin bowl. And of course for this cupcake you will need to take less condensed milk, t is high there and the cake starts to burn, so I had to cut a little at the bottom and scrape the top. A very interesting structure turned out - finely porous, the cupcake itself is very delicate and fragrant. Thank you !

An excellent and extremely labor-intensive cake.
You can put starch as a stabilizer, but I never put it. It wasn't even in the recipe before. Even without a mixer, I did it many years ago. It always turned out well and tasty, because butter, eggs, condensed milk are good products.

Shine, does not smell of eggs, a very strong aroma of condensed milk, and of vanilla. For a muffin maker, a full recipe is a lot, so I counted 3 eggs and, accordingly, in order not to deviate from the recipe and reduced all the other components, but either the eggs are large, or something, the dough turned out to be liquid, like 10% sour cream, therefore I added more starch. Probably if you bake in the oven, then everything is OK, but for the muffin maker I was afraid that it would burn and not bake. All the same, of course, because of the large amount of condensed milk, it burned, but it was baked perfectly, and what had to be scraped, okay, but delicious.

Yes, indeed, there was no cornstarch in the recipe. Initially, 120 g was taken. flour and then according to the recipe ... I just replaced some of the flour with cornstarch, baking with it only gets better. But it is possible without it, as before, it is not critical.

glad, thanks for the recipe! I baked in a multi-baker with muffin sticks and thin waffles. Well, very tasty! True, I had to add three spoons of flour, because the dough was liquid (probably due to the fact that the eggs were large).
