Ingredients

peas (halves) 1 glass
smoked meats 300-500g
large potatoes 2 pcs
carrot 2 pcs
onion 2 pcs
bell pepper 1 PC
garlic 4 cloves
white bread
salt 1 tsp
beef 500 g
parsley for serving optional
olive oil 50 ml

Cooking method

  • This is one of my favorite soups. Fragrant, tasty and unusual.
  • First, let's prepare garlic croutons. Cut the loaf into 1 * 1 cm cubes. Combine the olive oil and the garlic passed through a press. Stir the resulting sauce with bread, dry like regular crackers in the oven for 10 minutes, until dry.
  • Cut the beef into pieces of 1.5 * 1 cm (approximately). Today I have a mix - beef + pork. Put it in a pot of water. Cut the smoked meats a little less. I cook with smoked ribs, although anything will work. I cut off the meat from the ribs (it will be needed later), and I throw the bones into the pan for the beef. Salt, put a whole onion in a saucepan, you can directly with the husk (so it will give a beautiful color), but washed)) Throw a whole peeled small carrot there. And cook over medium heat for about 2 hours (until the meat is cooked), removing the foam at the beginning.
  • When the broth is ready, take out the bones, onions and carrots, they are no longer needed, add 1 cup of washed peas. We cook it quickly, if in doubt, you can soak it for an hour beforehand.
  • Cook over medium heat for 40 minutes.
  • Add potatoes cut into small cubes. Cook for another 15 minutes.
  • At this time, fry lightly smoked meats, then add finely chopped onions, grated carrots and pepper cut into small slices. Fry with smoked meats for another 3 minutes over medium heat.
  • Pea soup with smoked meats
  • Add to soup, cook for 10 minutes. As you can see, it takes us 65 minutes to boil peas in total, it is enough for it to boil, but not boil.
  • Done. Pour into plates, sprinkle with parsley and toss a few crackers on top. They complement the taste.
