Mackerel Riyette

Ingredients

mackerel s / m with my head 450-500 grams
garlic 2-3 teeth
small turnip onion 1/2 piece
butter 40 grams
vegetable oil 2 tsp
cream 33-35% fat 50 grams
Bay leaf 1 piece
sweet peas 2-3 pieces
rosemary small twig
salt taste
lemon pepper (black pepper, paprika, onion, garlic, celery root, citric acid, oil and zest, lemon extract) taste
spices for fish taste

Cooking method

  • Mackerel RiyetteDefrost the fish (it is better to do this in the refrigerator). Gut, cut off the head. Wash and dry well. Place on foil. Add rosemary, bay leaf, allspice. Put the garlic cloves. You don't need to clean them, just wash them. Drizzle with one teaspoon of vegetable oil. Salt lightly.
  • Mackerel RiyetteWrap the fish with spices in foil and send it to an oven preheated to 180-200 degrees for 20-30 minutes.
  • Mackerel RiyetteTake out the finished fish, unfold and let it cool.
  • Mackerel RiyettePeel the fish and peel the garlic. Remove all fish bones.
  • Mackerel RiyetteCut half the onion as small as possible. Fry until tender over very low heat in a mixture of vegetable oil (we have 1 teaspoon left) and 20 grams of butter.
  • Mackerel RiyetteMash the fish with baked garlic with a fork. If bones come across, be sure to remove them.
  • Mackerel RiyetteAdd onion and soft butter to the fish (we have 30 grams left). Season with salt and spices. Stir well to distribute the oil and onion evenly.
  • Mackerel RiyetteWhip the cream until fluffy. We don't need solid peaks. Do not forget that only heavy and cold cream is whipped. If there is no cream, then they can be replaced with sour cream.
  • Mackerel RiyettePour the cream into the riyet and stir gently.
  • Put the riyet in the refrigerator for at least an hour.
  • Mackerel Riyette

Ira, I think the fat one is better. Although, if you increase the amount of butter and cream, it can be made from hake or other sea fish. It will be good from a red fish (trout, salmon). But it is very expensive, of course.
