Potato pancakes: a new look at old things

Ingredients

potatoes optional
bulb onions 1-2 large onions
salt taste
whey (milk, sour cream) based on the volume of potatoes

Cooking method

  • Potato pancakes: a new look at old things
  • So, let's begin. We wash and peel the potatoes. Then we pass it to a juicer like "Zhuravinka" or "Dewdrop". You should get it like this: grated potatoes will pop out from one hole, and potato juice will be collected in a container from behind. We carefully sort out the grated potatoes from small, not grated parts, otherwise these parts will not be fried in potato pancakes and will crunch unpleasantly on the teeth. Add whey to the grated potatoes sorted from pieces (milk, sour cream, who does not like to add dairy products, then you can add a little potato juice, but just do not mix it, potato starch will settle at the bottom of the container - we do not need it in potato pancakes) salt, three onions on a fine grater. I have 100 grams of whey, 2 large onions and 1 tsp for a 2-liter pot of grated potatoes. salt. We mix the whole thing: the dough for pancakes should be thick enough.
  • 1st cooking method: as usual, put the dough in a preheated pan with sunflower oil about a centimeter thick and fry over medium heat until golden brown. I make potato pancakes plump. And on the inside, they taste like fresh potato dumplings. Pour homemade sour cream or homemade yogurt. M-M-M yummy-lyapota!
  • 2nd cooking method: We cover the baking sheet with baking paper (I use silicone paper so that the potato pancakes do not stick) 1 cm thick. We put the baking sheet in an oven preheated to 180 degrees. We bake for 15 minutes, then turn the potato pancakes and bring to readiness (approximately 10-15 minutes. Serve with yogurt (this serving is very suitable for those who eat according to Mirimanova's "Minus 60" system), or with homemade sour cream.
  • Such potato pancakes are more dietary (starch goes away with potato juice), but this does not affect the taste.
  • This is how much starch settles on the bottom of the bowl.
  • Potato pancakes: a new look at old things
  • We wash the starch in cold water. We let him settle to the bottom again. We carefully drain the water. Stir the starch from time to time and dry it in a bowl. We will store it as you like and use it when needed.

Note

About 7 years ago, Canadian frozen potato pancakes of McCain brand appeared in our stores. Somehow it was for the money, and then the price tag for them increased to such that for this money you could buy a bag of potatoes. Since then, I have been doing this: I single out a day (usually one of the days off). My husband and I sit down, peel half a bag of potatoes. We skip everything to the juicer - it turns out very quickly. Then we fry it all in 2 large pans (it turns out quickly too) or bake it in the oven. Let it cool. Put in portions in bags and in the freezer. Warm up in: airfryer, microwave oven, in a steam cartoon.
Bon Appetit!
P.S. Everyone in our family adores potato pancakes, especially the youngest son - he is ready to eat them 4 times a day, 7 days a week.

Mm, dranichki. Tanechka, do I understand correctly that we leave starch only for dietetic? If you don't leave it in a bowl, but add it to potato pancakes, will the final product change much?

I think the final product will not change. It's just that my husband is diabetic and I dodge as soon as I can to make the dishes more or less suitable for his nutrition.

Can you use any juicer? My cake collects in a separate container.
Natasha, here is the compartment where the cake gets, for example, if we squeeze apple juice and potato juice gets. I do not know the correct name for this type of juicer. But inside there is a sieve bowl with small holes and the actual metal circle itself on which the potatoes are ground.

Tusya Tasya, ANGELINA BLACKmore, cook and eat with pleasure!

Centrifugal juicer, in!
DonnaRosa
What glues potatoes in such potato pancakes without starch? I don't put any egg or flour in ordinary ones, but starch does its job. Sometimes you come across less starchy potatoes (red on top and long, but yellow inside), potato pancakes are obtained from it so-so, they just fall apart.

I had just such a juicer, gave it to a friend as unnecessary. Here's a bastard, I didn't think of rubbing potatoes on it. And what a great idea!

Here, you bastard, I forgot to answer your question: Yes, I don't add any flour or eggs

What sticks potatoes in such potato pancakes without starch?
DonnaRosa, I will not tell you what sticks the potatoes together, but believe it, the potato pancakes do not fall apart, they turn over as well as if they were cooking in the usual way.

Well, I thought of it a long time ago, I grated five potatoes in a juicer quickly, but I washed, dried and wiped it much longer. There is also a grater in a fine mesh, it must be washed thoroughly and for a long time with a toothbrush. : -

It is not entirely clear to me why such a simple dish like potato pancakes should be so complicated. How much of that starch and how often do we cook potato pancakes so that they harm us with their starch? Or are these troubles for diabetics?

DonnaRosa, from your posts in other topics, I realized that you are cooking only for yourself. For 5 potatoes, I would not bother with a juicer either. You will really wash longer. But I have a family, and one where everyone LOVES potato pancakes. And in a note I wrote that we make at least half a bag of potatoes. I would have looked at the man who rubbed half a bag of potatoes by hand

It is not entirely clear to me why such a simple dish like potato pancakes should be so complicated.
And here I didn’t get the slightest idea: how to complicate things? I do not squeeze starch - it sinks to the bottom. Yes, for diabetics this is also essential - you need to count XE-bread units, and they are people too and want to eat all the dishes that ordinary people do. And starch is very quickly broken down into glucose and carbohydrates. Starch is also extra carbohydrates and calories. I'm not thin - it is also useful for me to eat such pancakes, especially baked ones.

and how often do we cook potato pancakes so that they harm us with their starch?
Well, you may not cook often ... As Irishka wrote Tumanchik somewhere in one of the recipes (in my opinion, about a potato grandmother) do you like potatoes as Belarusians love them? And in a note, I also indicated that mine are ready to eat potato pancakes every day. So everything is relative and, as they say, all markers are different in taste and color!

But, unfortunately, when the work begins (and we, that we will earn over the summer, we live for the winter), it is not possible to observe it In the heat, and in the car you will not especially store food (if you take a pile), or buy a special refrigerator.

Irinka Significantly like this: you can drain it through cheesecloth, but not dry, all the same, the grated potatoes should remain wet, well, then add khosh milk, khosh serum al sour cream. I just have a sea of serum (a familiar thrush gives in liters), but tonight I will do mozzarella and riccott - again there will be a sea of whey. By the way, I always bake bread on it - I like it even more if I added milk to the dough!
About the second method of baking, I bake pancakes, because how to turn them over. Theoretically, it is possible with a layer, but I think that practically turning it over will be difficult.

What an interesting recipe. You should definitely try it, it is especially relevant now in the post, since no eggs.
I don’t know whether it will work in my Polaris or not. Although the possibility of making potato juice is mentioned in the instructions.

Wiki Try it on a couple of potatoes. If your Polaris is centrifugal, then everything will work out. Do you make apple juice with it? Does the cake accumulate somewhere in the juicer itself? If so, then feel free to do it, everything will work out.

Yes exactly. To the touch, when I turned it over, it was felt that it was not crunches and not to live. Nice ones. I put sour cream in the potato dough, and instead of plain salt, Svan. The scent is unimaginable.
It didn’t work, because I pressed only 7 potatoes, the dough was too small - why bake there ?! ... Already fried. And today I’ll try to make more and bake.
By the way, about washing the juicer - my SV Bosch is washed once or twice, with a toothbrush, literally seconds. Nothing gets stuck there and there were almost no unused particles of potato. I'm glad.
Orshanochka
ANGELINA BLACKmore, Natalya, somehow it doesn't bother me to manually wash the juicer (I don't have a dishwasher)

And I don’t have a PMM, I wash it with my hands, a lousy toothbrush and a clean sieve. There is such a cool mesh that it washes wonderfully.
I will definitely write about the baked ones.
Wiki
I made potato pancakes today. The mass after the juicer turned out to be quite thick. I added a little potato juice, salted it, shaped it into cutlets, rolled in breadcrumbs and fried in vegetable oil. I didn't put the onion, I fried it separately and poured the finished pancakes on top. Husband said it was very tasty (I don't eat)
Cutlets did not fall apart at all, just plump, like meat.
One thing I didn’t like was that after my juicer, there were a lot of unwashed potato plates. I made from six large potatoes, and so there were plates for about one potato. I tried to bring these pieces to mind in a grinder, but there was little mass and it just dangled around the knife. What I could rub on a fine grater.
It turned out 6 potato pancakes, about 500 ml. potato juice and a little starch.

Thanks for the recipe

Somehow I'll make potatoes for zeppelins according to this principle, there you just need to squeeze it very well.
Orshanochka

I tried to bring these pieces to mind in a grinder, but there was little mass and it just dangled around the knife. What I could rub on a fine grater.
But this already depends on the juicer itself. My mother on Rosinka, too, has a lot of chips and quite large ones. And on my old Zhuravinka namana, only small ones.
And you can not roll in breadcrumbs - they do not creep - turn it around. For how many years I have been cooking like this, I have never been to creep.
Somehow I'll make potatoes for zeppelins according to this principle, there you just need to squeeze it very well.
And then you mold with meat inside? Then fry and simmer in sour cream? Here in our family this dish has always been called zeppelins. And as you climb into the Internet, there is something completely different - with boiled potatoes. And Dumplings are also made from boiled potatoes, but I like it from freshly squeezed potatoes, although it takes longer to cook them, but they taste completely different.

Of course from a juicer. She shoots these pieces straight, it becomes already scary

Next time I will make a larger portion, respectively, and there will be more pieces. Well, I'll punch them in the grinder, that's all.

I do real Lithuanian. As my Lithuanian friend does. Inside is meat. Then they are boiled in water, like dumplings. When serving, pour onions fried on lard.
Only there the potato mass is not made from one raw potato, but mixed with boiled one. One third of the potatoes boiled in their skins (ceiling) and two thirds of the raw grated and well-pressed. And you also need to return the settled starch there without potato juice.
Orshanochka

The zeppelins still have boiled potatoes and no eggs.

There are many zeppelin recipes on the internet, but everywhere boiled peeled potatoes are added to raw ones. A friend of mine adds potatoes, boiled in their skins, then peeled and mashed.
She always prepared this dish for her birthday, and her dad, a Lithuanian, came to grate and squeeze potatoes (a bucket), because she did not have enough strength to squeeze out as needed. And never a single zeppelin fell apart.

Therefore, I think that the method of chopping potatoes into potato pancakes with a juicer, proposed by Orshanochka, is very suitable for making zeppelin.
Orshanochka
Tumanchik,
Are the girls like that? there is only one raw potato
Our family prepared them differently. I will not lay out a separate recipe, I will write here and now. The first stage, just like yours, we squeeze out the potatoes, shape them in a round piece, inside the minced meat that you like, pinch and round to a washer. This is how we do all zeppelins. Then fry the whole thing in a pan in vegetable oil until golden brown. We store in a pan pre-sprinkled with a little vegetable oil. Cooking the sauce - I will not say in exact proportions, I always do it by eye and on the sensation of the consistency of the sauce - sour cream + water + seasonings (lavrushka, black and allspice, etc., etc.) Fill our zeppelins and simmer until tender ... Serve with herbs.

The same thing about dumplings - squeeze the potatoes and add salt. Form balls and dip into broth. In the broth, again, spices to taste. They cook longer than with boiled potatoes, but I like the taste more. Although, of course, I did it with boiled, the so-called Italian-style gnocchi (they also add eggs and flour). But only the youngest sharpened them in our family like a hamster.I didn't like it.
Arka, so I love it without eggs and flour - after all, these components interrupt the taste of potatoes, in my opinion, not for the better.

ANGELINA BLACKmore, Natasha, thanks to the report! I am glad that you liked it!

I wanted to write everything, but everything was somehow postponed in the backyard of my memory. I tried to punch potatoes through a blender - I didn't like it - the potatoes turn out to be grainy, and when frying potato pancakes, I feel it. If you try like Wiki just finish off the remaining splinters, then yes .... And if you knead all the potatoes on a blender - I do not advise.

My SV shakes well, there are practically no stuns. Yesterday I did it, I pulled out only two plates 1 cm in diameter. ANGELINA BLACKmore, We use our juicer for the season to the point of indecency. I even make cherry juice on it. I throw in the cherries along with the seeds. It's just that more often then you have to remove the bones. Both red currants and grapes. Well, God himself ordered apple juice. There were so many apples last year! And they put the juice, and from the juice also apple champagne!

Orshanochka, many thanks for the new rendition of the old recipe. This gives you another wonderful product - potato juice. In the morning on an empty stomach, drink a glass of fresh juice and stomach problems will disappear. Of course, the juice is not very good in its taste, but a natural product, which is better than chemistry.
ANGELINA BLACKmore
And also a by-product of production - starch. It is, of course, not as beautifully snow-white as the store one (bleached with chemistry), but it is also a natural product. Personally, I was glad that I also have my own starch now))
Orshanochka
knobBut about potato juice I didn't know what to drink as medicine. I'll go and ask the universal mind, but I just poured it out. and cook for health!
ANGELINA BLACKmore, Natalie, yes, the starch is not as snow-white as in production, but a la nature! And I have something confusing to mess around with a juicer - too little output from one bookmark turns out, but it's decent to wait for the juice to boil. Well, we like nat- so that once .... and it's done. I just open the juice cans later, dilute the juice with boiled water.Somewhere I read that drinking such concentrated juice is harmful to the stomach. Since then, I dilute all juices made on a juicer with boiled water and everyone puts in sugar as much as he needs or as much as his health is allowed (diabetes mellitus).

I addwhen the eldest son worked and lived in Mogilev, they often wandered there for the weekend, to visit my son, to play bowling (where, for the first time in my life, I tried grape snails and since then I cook them myself). And there was a cafe there on the central pedestrian square, called "At Maxim's". What delicious pizza they served on potato dough. I rummaged through our forum, but everywhere in the recipes it is made from mashed potatoes like Rolton, or from boiled potatoes. And there, in a cafe like a big pancake potato pancake made of freshly grated and baked potatoes. But no matter how much I tried, I didn’t come close to that taste
Valkyr
I also made from 2 kg of potatoes. There was little cake, a lot of juice. Well, I drank a glass of juice, poured the rest. I dried the starch, pancakes like zeppelin just turned out. The usual ones are tastier, these are not economical at all. If not in a company, it is better to cook in the usual way with a grater or a combine. Or if you have health problems.
