Ingredients

beets (small) 2 pcs
carrots (small) 2 pcs
red beans 0.5 cans
gherkins 15 pcs
large pickled capers 0.3 cans
green onion 2 feathers
olives or olives ~ 0.3 cans
green apple (small) 1 PC
for marinade
apple cider vinegar 6% 0.5st
granulated sugar 0.5 st
water 1.5 tbsp
beet 150 g
for sauce
vinegar 6% ~ 1 tbsp. l
sunflower oil ~ 2-3 st. l
mustard ~ 1h l.
ground black pepper taste
salt taste
quail eggs 20-30 pcs

Cooking method

  • Pre-marinate the quail eggs (for a day, two).
  • To do this, add the ingredients for the marinade to a saucepan, bring to a boil, boil for 5 minutes. Pour boiled and peeled eggs with hot marinade.
  • For vinaigrette
  • Boil the beets whole. Peel, cut into small cubes, add a little sunflower oil and stir. This is necessary so that when we combine all the components of the vinaigrette, the beets do not color them.
  • Peel raw carrots, cut into cubes, boil in boiling salted water, drain the water, rinse with cold water.
  • Cook the beans. If the beans are from a can (like mine), drain the water, rinse the beans.
  • Peel the apple and cut into small cubes.
  • Cut the gherkins and olive into circles.
  • Chop the green onions.
  • Mix all the ingredients, season with sauce, put on a dish, garnish with quail eggs and pickled capers.
