Ingredients

Wheat flour 500g
Fresh yeast 15g
Milk 350 ml
Butter 50 g
Sugar 3 tbsp. l.
Salt 1 tsp
Soda 2 tbsp. l.
Water 1.5 l
Poppy seeds (sesame seeds, cinnamon - for sprinkling)

Cooking method

  • Pour half of the milk, put the remaining half of the milk to heat, add butter there so that it melts completely. Remove from heat, add sugar and salt, let dissolve completely. Add cold milk.
  • Mix flour with yeast and add milk.
  • Knead the dough and leave for several hours, covered with a film or towel. Well, or, as the author advises, after kneading, put the dough in the refrigerator overnight (as I did), and in the morning take it out and leave it at room temperature for 2 hours.
  • Knead the matched dough, divide into equal pieces (8-10 pcs.). Shape the bagels as they should by connecting the ends.
  • Bring water to a boil, gently add baking soda and reduce heat. Carefully, one at a time, put in a saucepan for 30-40 seconds, they should increase in volume, during this time you can turn them a couple of times.
  • Remove from the pan, let the water drain, cover the baking sheet and place the bagels. Sprinkle with sesame seeds or poppy seeds, you can just use coarse salt. No need to lubricate.
  • Bake at 180 degrees for 30 minutes, if you are making small buns, then 20 minutes, until golden brown.
