Yeast wreath with cherry filling

Ingredients

Flour 600 g
Milk 120 g
Water 230 g
Butter or margarine 70 g
Pressed yeast 6 g
Small egg 1 PC
Sugar 45 g
Salt 3 g
Vanilla sugar 1 tsp
For filling:
Defrosted cherries 1 glass
Sugar 90 g
Starch 4 g (0.4 tsp)
Flour 10 g (1.2 tsp)
Spices to taste

Cooking method

  • This is one of the favorite baked goods in our family. The pie is very tender and airy, and it stays like this for 2-3 days for sure. Then I don’t know - then nothing remains of him.
  • Knead a non-steep dough I kneaded in x / p Panasonic on the "pizza" mode for the first half of the cycle, this is about 15 minutes. Leave to rise for an hour and a half or two. I put it on the rise in the microwave, preheated with a glass of water. The cup of dough was not covered with anything

  • While the dough is rising, let's start the filling. In a bowl with a thick bottom, heat the cherries with sugar until the sugar dissolves. You need to stir constantly so that it does not burn. When it starts to boil, in small portions we begin to add flour mixed with starch. I sow through a sieve. Stir constantly so that there are no lumps. When the filling thickens, set aside - while the dough rises, it will cool down. You can add spices and nuts to taste. I added ground cardamom.
  • The dough has risen, it squeaks and smells delicious))

  • This is not the first time I have made such a wreath, and I always did not like that during proofing and baking, the filling flowed into the mold, all this, of course, burned, so this time I made the bottom. Before rolling out the dough, I separated a small part of the dough and spread it over the bottom of the mold. And already on this bottom she put pieces of the roll.

  • Now we start rolling. I rolled it thinner.

  • Spread the filling over the entire surface

  • Roll up with a roll, pinch the edge a little so that it does not diverge, then smooth it so that it is even, and lightly roll the roll in flour.

  • Cut into equal pieces and distribute to shape.
  • My shape is 25 cm in diameter

  • We put a wreath on proofing, I again warmed up the microwave with water and sent the form there. Upset for 45-60 minutes. The wreath rises very well. True, because of the innovation in the form of a bottom, I don't quite have to distribute exactly so that it works) And here's the result)

  • Preheat the oven to 100-120 degrees Celsius 20 minutes before the end of the proofing. We put the cake in the oven and leave a gap of about 15 centimeters. With the door open, bake a wreath for 25-30 minutes.
  • Yeast wreath with cherry filling
  • Then we close the door and increase the temperature to 180-200 degrees. During the first stage, the top was already baked enough, so I covered the top before increasing the temperature. This type of baking just gives the fluffiness. I baked it both in the oven at 200 degrees and in a bread maker - the pie turns out to be denser.
  • Bake for another 15 minutes, then take out, sprinkle with powdered sugar and leave to cool on the wire rack.

Note

Cherry I have ours, Altai, it is sour, so, perhaps, for other cherries you need less sugar. Or, on the contrary, more, because I wanted the filling to be sour and not very sweet. Therefore, the amount of sugar must be adjusted to your liking.
You can bake this wreath with jam, in the original it was plum. I used to bake with yellow plum jam, currant jam, raspberry jam, and chocolate paste. We liked the cherry version the most. The only thing is that next time I will increase the amount of filling one and a half times.
