Zucchini in nut dressing

Ingredients

Zucchini medium 0.5-0.6kg
walnuts 100 g
parsley ~ 25g
garlic 2-3 teeth
soy sauce 1 tbsp. the spoon
vegetable oil

Cooking method

  • Cut off the tail and top of the zucchini. Cut the zucchini lengthwise into two parts, and each part lengthwise into three more parts, and then crosswise into cubes. Season with salt and leave for 15 minutes. Drain the resulting juice. Fry in vegetable oil, over high heat, in a single layer in a large skillet until golden brown, this will take no more than 4-5 minutes. Mix frequently and gently. Transfer to a salad bowl, I try to keep the oil in the pan as much as possible.
  • Grind 100 grams of nuts in any convenient way. Finely chop the parsley. Pass the garlic through a press or grate with a grater. Combine all vegetables with nuts, add one tablespoon of vegetable oil and one tablespoon of soy sauce. Stir well.
  • Put the dressing on the nuts, stir gently so that the dressing is evenly distributed and the zucchini pieces remain intact.
  • A hearty dish.
  • Both hot and cold are very tasty.
