Cupcake ala-Stolichny (cupcake GFW-025)

Ingredients

Butter 120g
Sugar / sand 90g
Egg / weight / shell 2 pcs / 110g
Flour / s 140g
Potato starch. 20g
Raisins 60g
Salt pinch
Baking powder 2 h / l` ~ 5 g
Cognac 1 h / l
Vanillin on the tip of a knife

Cooking method

  • Beat softened plum / butter with sugar / sand, vanilla and salt until smooth and fluffy.
  • Add eggs one at a time, beating after each 1-1.5 minutes.
  • Pour in brandy, stir.
  • Rinse the raisins, dry and roll in 1 tbsp / l of flour taken from the total amount according to the recipe.
  • Sift flour mixed with starch and baking powder into the whipped mass, mix gently, it is more convenient for me to do this with a fork.
  • Lastly, add the floured raisins and, again, gently combine with the dough.
  • The consistency of the dough resembles thick 20% sour cream, very tender.

  • We heat the cupcake until the green light is turned on, grease it and turn it off (lately I have been doing this, the bottom and the lower inner part of the cake, which is in contact with the mold, tan less). We spread the dough.

  • Turn on the cupcake and turn it over 15 seconds after the green light comes on. Cooking for 14 minutes.
