Since childhood I love milkshake. I used to make it according to the classic recipe - with ice cream. But I don't always have ice cream in the freezer, and milk is on the "must always be" list
Pour milk into a tall glass from a hand blender and put it in the freezer.
We are waiting for the milk to turn into a loose ice crumb (not into stone!). You can periodically look into the freezer and mix the ice freezing on the walls with milk for even freezing. I advise you to time the time it takes for the milk in your fridge to become icy so that you can make it easier next time by simply setting a timer.
Put chopped fruits or berries in a glass. For this amount of milk, I usually put 1 nectarine or peach, a handful of currants or strawberries. If the berry is frozen and small, we throw it without defrosting. It is better to put unfrozen fruits in the refrigerator in advance so that they do not melt the milk ice. Sugar - to taste, depending on the acidity of the fruit and berries. I usually put no more than a tablespoon.
And we begin to beat vigorously with a submersible blender, raising and lowering it in milk ice, thereby helping to get more fluffy foam. Goal: break the ice and increase the volume.
We pour and drink immediately))

By the way, what you need ice cream is not at all like that. Which you have confirmed. The cocktail turns out to be thick not because of the ice cream at all, but because of the ice! This is really the trick. Without ice, but with ice cream, you can whip until crazy and nothing happens. It will thicken a little, but not really thick.
Back in the USSR as a child, I remember very well how they cooked it in stores. A bucket of milk and ice crumbs is required and just a little ice cream per liter glass of a blender. It will be remembered for a lifetime.
