Ingredients

Meat: Turkey, beef (lean) 500 gr.
Eggplant 500 gr.
Carrot 500 gr.
Tomatoes 400 gr.
Bulgarian pepper (multicolored) 4 things.
Bulb onions 3 pcs.
Parsnips, celery - root vegetables (not essential) 100 g
Salt, sugar to taste

Cooking method

  • Quite recently, a good friend of mine showed me photographs of her harvest of vegetables in the country, immediately remembered a recipe from childhood when summer came and we always had this dish in our house, both cold and hot.
  • After so many years, it always reminds me of the smell of my mother's hands ...
  • Rinse the meat, cut into cubes and fry until half cooked
  • Wash the eggplants, cut into cubes, season with salt and let stand for 30-40 minutes to release the bitterness. Wash the Bulgarian pepper, remove the core, cut into small squares and fry in vegetable oil.
  • Squeeze the eggplants, wash and also fry, combine with pepper.
  • Peel the carrots, celery, parsnips, wash, cut into strips and fry in vegetable oil, add the onion chopped in half rings, fry everything. Combine the fried vegetables with the meat and put in a kettle, add diced tomatoes or a tomato and simmer over low heat until tender, add boiled water as needed. Before removing from heat, add salt and sugar to taste and boil a little.
  • Served on the table both cold and hot, you can add parsley, dill to taste.
