Cooking method

  • This pasta recipe turned out completely by accident, based on prefabricated recipes

  • I can't say what prompted me at that moment, a mixture of vegetables and herbs drenched in oil, beat in a food processor until smooth. But what's done is done))
  • At first, I didn't like this paste. And I pushed it into the refrigerator in the zero chamber according to the principle "I won't eat, it's a pity to throw it away, let it be worth it"))
  • And then, gradually, when the pasta matured after a few months, all the ingredients made friends with each other ... it turned out that this was a very tasty product!))
  • Now "this product" remains at the bottom of the jar)) It's time to cook a new portion of pasta, let it ripen slowly in the refrigerator))
  • PRINCIPLE OF COOKING
  • Sort out the parsley and mint greens, tear them off the branches, rinse in the "carousel", dry. I wash all the greens in the "carousel", it turns out clean and dry, and is ready immediately for further processing. Transfer the herbs to a bowl.
  • Peel the garlic. Peel chili peppers, remove strong bitterness. If you like the very bitter component of the seasoning, you can leave the seeds. Grate the lemon zest.
  • I do not grate garlic and pepper, I leave it in coarse slices, because in the future the vegetables will be broken with knives.

  • Put the herbs and all the other ingredients into the bowl of the combine with knives. Pour olive oil, break everything until smooth, to a paste.
  • No salt is added to this paste!

  • I close the lids and put them in the refrigerator so that the olive oil grabs and freezes - it will be a preservative.
  • It turned out to be two 650 ml jars of paste. - hopefully enough until next season))

The dish is designed for

2 cans of 650 ml.

Note

The taste of the pasta is fresh mint, with hints of parsley, garlic and citrus. And not oversaturated with different flavors. There is a pleasant taste and aroma.
Everything you need for the marinade: mint, parsley, lemon, garlic, chili, oil!
This pasta is great for marinating meat, 1-2 tsp. pastes will make the meat taste great!
A great addition to stews. I love to stew chicken in tagine with this pasta
I don't add salt to this paste.
Bon appetit, everyone!

It should be noted that the conservation of greens with olive oil gives excellent results, the greens retain their properties and aroma.

Thank you, so thank you!
I take on
Tanya, why not ...
And if with salt?
Admin
Girls, to your health! Hope you will not be disappointed

mamusi, I think that salt is inappropriate here, a seasoning in oil, liquid - and salt can be added directly to food during cooking. Consumption approximately 1-2 tsp. for pickling or stewing.
Salt "looks" good and works well in dry seasonings where small amounts are needed to add flavor.

But I'll try this one without salt

We are always guided by our own taste
But, try first like mine, without salt. If you don't like it, you can always add salt and beat with a blender again
