Ingredients

milk 0.5% 2 liters
fat-free soft cottage cheese 250 grams
C-O eggs / C-O egg whites 2 pieces / 4 pieces
fat-free kefir 2 tablespoons
salt 1 level tablespoon

Cooking method

  • Beat eggs a little with salt.
  • Add cottage cheese and kefir. Stir well.
  • Bring the milk to almost a boil until bubbles appear.
  • Constantly stirring milk, pour in a thin stream of egg-curd mixture.
  • Bring everything to a boil and simmer for 3-4 minutes over low heat.
  • Line a colander or cheese dish with gauze.
  • Collect the flakes with a slotted spoon and put in cheesecloth.
  • Flatten the mass. Cover the top with gauze edges.
  • Put a plate on top and place the load, about half a kilo.
  • Leave on the table for 2 hours.
  • Then remove the load. Leave the mass in a colander or form, and put in the refrigerator for 12 hours.
  • Then, the resulting cheese, free from gauze, put on a plate, cover.
  • Keep refrigerated.

20 minutes + 2 hours + 12 hours
