Cooking method

  • I love eggplant in any form, and this recipe is one of my favorites. All you need is a well-baked eggplant, preferably over a live fire, salt and oil. Butter can be anything - equally tasty with butter and vegetable! I highly recommend trying both !!!
  • Wash eggplants, leave the tails for easy cleaning.
  • I bake the eggplant on the gas burner, piercing it with two skewers for a stable structure. You can cook 2-3 eggplants this way at a time. They cook on the fire quickly enough - as they begin to charcoal slightly on one side, turn the structure over and bake until tender. I put foil under the burner.

  • Of course, you can and should bake on the grill, but if there is no live fire, just as there is no gas burner, then it is quite possible to bake well on the grill or in the oven.
  • Now the most important thing is to clean the hot eggplant.
  • The charred skin can be easily removed; for convenience, you can moisten your hands with cold water, placing a cup next to it. It is important for us to peel the eggplants quickly so that they remain hot, but of course you should not burn your hands and you can let them cool slightly for about 5 minutes.

  • Whisk peeled, still hot eggplants with softened butter (which the author of the recipe insists on hotly!) Or with vegetable oil (like mine this time) in the process, add salt to taste. I just beat it with a fork. With butter, eggplant turns out to be more airy and fluffy, it's not for nothing that the author called her recipe an eggplant "cloud"! There will be no fluffiness with vegetable oil, but it is also very, very tasty !!
