Ingredients

low fat yogurt 100 g
dry instant yeast 1 tsp
sugar 1/4 tsp
psyllium 5 g
egg (medium) 2 pcs
COM (skimmed milk powder) 30 g
corn starch 20 g
gluten (gluten) 50 g
baking powder 1/2 tsp
salt 1/2 - 1 tsp
oat bran 1 tbsp. l. with top
wheat bran * 1 tbsp. l. no top
chia seeds (optional) 1 tbsp. l.

Cooking method

  • I've been baking this bread for 4 months already, it tastes like real bread. Yes, real bread without flour and without prejudice to the figure. From this amount of ingredients, a loaf is obtained, which is enough for me for 3-4 days.
  • In warm yogurt (I have homemade, made from 1.5% milk and sourdough. You can also from 0.5% milk) add sugar (do not worry, this amount will be eaten by yeast and will not harm our figure) and yeast, mix thoroughly. Add psyllium and mix well again. I do all the mixing manipulations with a hand mixer.
  • Leave the mixture for 5-10 minutes to swell the psyllium. If left for longer, then the lumps will be very difficult to break. Add eggs and salt and beat until smooth. Add all other ingredients and mix thoroughly. The consistency of the dough is like a pancake.
  • Cover with a lid or plastic wrap and put in a warm place for 30-40 minutes. Knead again with hooks for at least 7 minutes. This stage is very important, without it the finished bread will be dull inside. Put it in a silicone mold (I tried it in a regular, covered with paper, I could not get it without loss) and leave in a warm place for another 30-40 minutes.
  • I put it in an oven preheated to 30 degrees. After half an hour I turn it on without taking out the bread pan. Bake on the lower shelf at 180 degrees without convection for 35-40 minutes. The top of the bread will be dark enough, it's not scary, it doesn't taste burnt. Turn off the oven and leave the bread there until it cools completely.

* you can take another 1 tbsp instead of wheat bran. l. oatmeal

The bran must be ground into flour. I do this in a regular coffee grinder.

The bread recipe was taken from Tatoshka, the famous ducan woman. But according to her recipe, I did not get anything worthwhile. Through trial and error, I discovered a new composition and quantity of ingredients.
By the number of DOPs (Dukanovtsy will understand me) bread is designed for 2 days.
This bread helps a lot to survive the hardships of the diet, it makes excellent toasts, sandwiches.
