I try to do it in small portions so that the pot is half full of tomatoes initially. It is then easier to stir and save the pieces. I pick small tomatoes and cut them in half.
PS Tomato itself is a preservative, so I close the tomato juice without salt, I can not add vinegar to salads with tomatoes, everything is fine in the apartment.
