Apple adjika

Ingredients

tomato 2.5KG
bell pepper, red 1 kg
spicy pepper 100 g
carrot 1 kg
green apples, sweet and sour 1 kg
garlic 200 g
salt 100 g
sugar 90-180g
vegetable oil 200 ml
table vinegar 9% 200 ml

Cooking method

  • I love apple adjika very much, I have been preparing it for several years. It is very tasty if you spread it on fresh bread, as a sauce for pasta or meat. It is tender, but with a slight pungent aftertaste in the mouth. One portion is always not enough for us)) Yesterday my son saw us eating adjika (the baby is almost 2 years old) and he is a lover of garlic, onions, lemons, etc. and left the bread))) Very tasty thing.
  • We prepare vegetables - wash and cut the tomatoes (in the original it is advised to remove the skin, but I did it with and without it, there is no difference). We clean and chop the carrots as convenient. Peel the bell pepper from seeds and tails, peel the garlic, remove only the tail of hot peppers (do not peel the seeds).
  • We grind everything in a meat grinder (I have an electric one) and set to cook on medium heat.
  • Cook for 30 minutes after boiling.
  • Then add oil, vinegar, salt and sugar, let it boil and cook for another 10 minutes. Everything can be poured into jars and rolled up.
  • I turn the finished cans upside down and wrap them for a day. Done.
  • Red-haired adjika with apples is ready.

The dish is designed for

about 4-5 liters

Time for preparing:

40 minutes + food preparation and cans cooling

Note

I prefer sugar in the amount of 90 grams, for me - if more then it is sweet, and you try to your taste during the cooking process. The same amount of sugar depends on the acidity of the apples.

MaroAdjika is very tasty, we have been doing it for 20 years. I tried a lot of options. If you add sweet apples, then you don't need to add sugar at all. And instead of the usual vinegar, I add apple cider or wine. Therefore, I have it, the child eats.
A little nuance, I add garlic after opening. The taste is different.
