  • The following changes had to be made from the original recipe: Jamie uses fresh thyme and prosciutto ham. Neither one nor the other is found in our area. Therefore, I replaced them with a dry mixture of Italian herbs (there is thyme in the composition) and boiled-smoked brisket. Jamie does not recommend salt, because prosciutto already contains enough salt. But the brisket is much more bland, so I salted it a little.
