Cucumber jam with tarragon and lime

Ingredients

fresh cucumbers 600 g
granulated sugar 180 g
lime 1 PC
tarragon (tarragon) fresh 1 tsp + 2 twigs
pectin 3 g

Cooking method

  • Cucumber jam with tarragon and limePeel the cucumbers and remove the seeds. Cut into cubes, approximately 1x1cm.
  • Cucumber jam with tarragon and limePlace in a saucepan, cover with sugar, let stand to let the juice start (you can leave it overnight). After the juice has emerged, add sprigs of tarragon to the cucumbers, heat the pan over low heat, bring to a boil, turn off and leave to cool completely.
  • Throw away the tarragon twigs, repeat the heating procedure one more time.
  • For the third time, bring the jam to a boil, add juice, lime zest, a teaspoon of chopped tarragon. Simmer for 8 minutes over low heat. Then add pectin mixed with a small amount of sugar (10 g), mix and cook for no more than 1-2 minutes.
  • Remove from heat, transfer to sterilized jars. Close the lid, turn over, let cool.

Note

I made it from overgrown cucumbers for testing. I liked the result, that's why I'm sharing it with you.
Now overgrown cucumbers are not scary to me.
