Soaked lingonberry

Ingredients

Lingonberry berries 1.5 kg for a 3 liter can
SOLUTION
The water is clean 1.5 liters
White sugar 150 grams
Salt 10 grams
Pepper multicolored peas 1-2 tsp

Cooking method

  • Sort the lingonberries, rinse and dry. I wash the lingonberries in the greens washing carousel, and dry them in it from excess moisture.
  • Transfer the berries to a jar. A three-liter jar holds about 1.5 kg of raw lingonberries.
  • Prepare a solution for urination.
  • Pour water into a saucepan, let it boil, add salt, sugar, peppercorns, and boil for about 1-2 minutes, until salt and sugar dissolve.
  • Remove solution from heat and cool to room temperature. Then strain the solution through a sieve to remove the peppercorns. Pour only a clean solution into the jar.
  • Pour the lingonberries with the solution, and leave warm, on the table for about a few hours. Then put the lingonberries in the refrigerator for storage.

Berries (ripen in August - September) are a valuable food product, contain up to 8.6% sugars (mainly fructose), up to 2% organic acids (malic, benzoic, oxalic, citric), 15 mg% vitamin C, carotene, 425 mg%, flavonoids, as well as tannins that cause astringent taste.

They are eaten fresh, they are used for making jams, jelly, marinade, fruit water, pastille, urinating (berries should be ripe, clean, without litter and stalks). Lingonberry jam is served with tea, as well as meat dishes (mainly for game) and is used as a filling for pies. Soaked lingonberry is a good side dish for meat and fish dishes; it can be added to vinaigrette and salads, sauces; a few hours before use, sugar should be put into it to taste. The presence of benzoic acid in lingonberries allows you to keep them fresh for a long time (in cold water).

Lingonberries urinate when you can buy. I also added cloves, cinnamon, a little salt. Instead of sugar, saccharin was added when it was. Now I'll put it down. And instead of water, I already wrote somewhere, poured raspberry sprigs with broth, so they taught. The broth turns out to be a beautiful pink color, fragrant, tasty. And this year I tried soaked lingonberry pies, cheesecake pies, sooo delicious!

There is not much sugar in this recipe for 1.5 kg of lingonberries, and it is quenched with lingonberry acid.
I try not to use sweeteners anywhere. For me, it's better to reduce the portion of natural sugar, or where you can just give it up altogether
