Ingredients

kefir 100 g
salt 18 g
sugar 25 g
mixture of 5 peppers, freshly ground 3/4 tsp

Cooking method

Once I stood for three days and the taste did not suffer, it even became even tastier. Now marinate for 1-2 days. Marinate from Friday and fry Sunday afternoon. In the summer at the dacha on the grill, in the winter in the oven with the addition of 1 tbsp. l of liquid smoke before frying for 1 hour. I put it on wooden skewers, cover it with foil on top. for 1 hour, remove the foil and grill for 30 minutes. turning over to the other side. Soft, juicy, slightly smoke-smelling shashlik!

I string it quite tightly, so the meat does not dry out, but it takes longer to cook at t * 160-180 * in 1 hour it is almost ready, it only needs to be browned. Sometimes I fry barbecue in Multi-Kuzin, but there the cooking algorithm is completely different in time and temperature, but I'm happy with the result.
