Ingredients

Flour psh. 550 g
Water 400 g
Sugar 60 g
Salt 5 g
Egg 1 PC.
Yeast 15 g
Vegetable oil for deep fat

Cooking method

  • From year to year for many years, we remember on the forum about the mechanical form for making donuts. And although I have repeatedly sent a recipe for making donuts in it, requests are repeated periodically, so I decided to issue this old recipe here with the same old photos. Where it came from - I don't remember exactly, it seems, from the packaging of this form, bought back in Soviet times, but the fact that it is old is proved by the presence of the mixed fat in the original recipe - it was deep-fried in a 50:50 ratio with vegetable oil.

  • It can be seen that the form consists of a bowl and a piston with a plug, which is fixed inside it by a spring. When buying, you should pay attention to the fact that the plug fits snugly against the hole in the bowl - no gaps are allowed!
  • Cooking the dough. To heated up to 30-40about water we add separately diluted yeast, granulated sugar, salt, egg.
  • Mix the mass thoroughly, add the sifted flour and knead the dough. We leave it in a warm place for fermentation.
  • Well risen dough is ready to eat. The consistency of the dough should not be thick, it easily pours into a mold, all parts of which must be well lubricated inside. The dough is ready, the deep fat is heated:

  • When you press the piston with your finger, an annular hole opens at the bottom, into which a portion of the dough is released. Do not overdo it - the dough will increase when frying! When the spring is released, the plug returns to its place, cutting off the "ring" from the dough.

Even in Leningrad at that time donuts differed in taste, and "Zhelyabovskie" (with B. Konyushennaya) could taste with closed eyes! And I don't know why lumpy and crumpets. They were sold like donuts in the cafeteria of my school, and I loved them not with powdered sugar, but with salt, and in the city there were donuts everywhere.

Well, as for donuts on the same Boulevard a la America ... inedible, I checked and with all my love for baking and pastry, they flew into the trash can along with the bitten one right in the bag.
