Ingredients

flour 200 g
hot water 150 ml
sugar 120 g
vanilla sugar 20 g
vegetable oil (I have butter) 3 tbsp. l.
baking powder 10 g
cinnamon 0.5 tsp
ginger 0.5 tsp
candied fruits, nuts optional
icing sugar for decoration

Cooking method

  • Egg-free muffins can be cooked in boiling water. I needed to replace vegetable oil with butter and, as a result, delicious gingerbread muffins.
  • Add sugar and vanilla sugar, baking powder to the sifted flour.

Mix sugar and vanilla sugar in a small bowl (bowl). Add 2 tbsp. l. water. While stirring, bring to a boil (to dissolve the sugar) and remove from heat.
Add swollen gelatin and citric acid to the syrup. Mix quickly and, stirring for 1-2 minutes, cool. Next, beat with a mixer at high speed until creamy. The glaze hardens quickly, so we immediately cover the surface (cooled, not hot) of the product with a thin layer.
The glaze is smooth, does not stick or crumble when cutting the product.
The glaze hardens quickly, but not lightning fast. I tried to store the leftovers in the refrigerator and then gently reheat. This is not to say that the result is hopelessness, but not that ...
There is a lot of glaze, so you can safely half for the first try. Although I often do a full portion, so as not to measure out milli-mini portions.

If softness is not important, then just under the volumetric lid (bowl). Place the muffins in one layer after baking (not one by one), it is better to store it this way. If you need to put it in several layers, then put sheets of baking paper between the layers. The cupcakes should already be cold.
