I just wanted to add to the recipe. It is not at all necessary to take a fillet, although of course fillet is preferable.
I'm going to make this ball for the New Year as well. She took out a piece of pork from the freezer, quite sure that it was fillet. But when this piece of pork thawed, I realized that it was my mistake. It turned out to be a spatula. But there is nothing to do, I promised my husband this ball, and already prepared the filling. I cut it lengthwise into 2 layers, beat off these layers well, cut off the excess and put a little more in the dish than I did before. I baked it exactly one day before, and only in the evening on the eve of NG, I opened the bag and baked another 5 minutes along with the cheese. It turned out great!
So, if someone does not have fillets, but there is other suitable meat, you can safely spin the ball!

I baked it in advance, cooked it longer (because of beef, I baked it for 3 hours, lowering the temperature to 150 degrees), and before the guests arrived, sprinkled it with cheese on top and warmed it up.
But, despite all the violations, the meat turned out great, everyone liked it.
