Ingredients

Egg C0 2 pcs
Sugar / sand 135g
Sl / butter (margarine) 100g
Sour cream 20% 140g
Wheat flour, premium 200g
Soda 3/4 h / l (from cotton / stove)
Salt pinch
Cream
Milk 400ml
Wheat flour 30g
Potato starch. or corn 8g
Vanillin on the tip of a knife
Drain / oil 82% 200g
Sug / powder 100g
Rum or cognac 1st / l

Cooking method

Melt the sl / butter (margarine) to a liquid state.
Beat eggs with salt and sugar / sand until sugar dissolves.
Pour in cold melted sl / butter (margarine), beat.
Add sour cream, beat.
Sift flour and soda into the dough, beat for a short time, until smooth.

The dough is like a thick muffin, it resembles 20% sour cream.
We heat up the waffle iron. I have an old Soviet-Baltic Spalis. I only greased the panels once before the first waffle.

We spread 1 tbsp / l full with a slide and bake for 1.5-2 minutes. Here is a small digression, if you do not hold the handle after closing the waffle iron for the first 10-15 seconds, the waffles turn out to be fluffy and loose, cracks may appear when rolled into a tube, so I advise you to hold the handle. Use an oven mitt to avoid scalding yourself from the steam. And also, when you press the lid, the waffles turn out to be more sandy and dry faster (more on this in the note), become very crumbly, although when you remove them, they are soft and easily curled.

The first 2 waffles, while the waffle iron is still heated, come out a little spotty, then the color becomes smoother.

Remove the finished wafer and roll it into a tube, put a spatula on top so that it does not turn around. Only after that we spread the next portion of the dough. For rolling, I used a wooden paper towel rail, its diameter is ~ 1.7-1.8 cm.

He's the simplest, I specially chose this one to soften the tubes a little, because it turned out to be super crispy. We heat 200 ml of milk to a boil, in the remaining 200 ml we dilute flour with starch (I took both potato and corn, I did not notice the difference, since there is very little of it here). Pour the mixture into the heated milk while stirring, add vanillin and stirring continuously with a whisk, bring to a boil (the first "buns" appear). The mixture thickens very quickly and resembles a puree. We close the film "in contact", that is, we press it to the surface, avoiding air bubbles (this is done so that no dried crust forms on the surface) and cool, I put it in a large bowl with cold water.

Beat the cooled milk "porridge" for ~ 1 min so that there are no lumps and add to the butter, beat everything together for literally 1-2 minutes, just to combine. The main thing here is not to overdo it, otherwise the cream may exfoliate. At first it may seem that the cream, after adding the gruel, will liquefy, but this is not so, in 1-2 minutes everything is surprisingly combined, and this is the consistency

The cream is not very sweet in taste, so the amount of sugar / powder can be increased. Now we take a pastry bag or syringe and fill the tubes, first up to half on one side, then in the same way on the other. Before that, you can melt the dark chocolate and dip the edges of the tubes.I didn't have any bitter, there was only milk with nuts, it is disgustingly heated, therefore the tubes did not look very good, although they were eaten very first.

If there are straws right away, then they will be crispy. I left it in the refrigerator overnight and the next day I got gorgeous pies. Overnight moisture from the cream slightly impregnated the tubes, and they became like soft shortbread cookies, but at the same time a little crunchy remained on top. Here is a cut on the second day

In fact, these pies are a complete impromptu. I started a dough for regular waffles, hoping for crispy ones. I baked the first one, and it is soft, and very soft, I twisted it with a tube. I sintered the second one, holding the lid already, rolled it up again, touched the first one - cold, but soft. After the third, I touched the first one again, and it was already dried up. Either the waffle iron was not fully warmed up, so the first one dried for so long, or because I began to hold the lid, but all subsequent waffles dried sooo quickly. I had to make a cream.
I took the recipe for the cream from here, reducing the amount by 1/3, it was just enough for all 15 pieces:
