Ingredients

For biscuit

baking powder 2 tsp
cinnamon 1 tsp

For carrot jelly
carrot 170 g
mashed mango 170 g
water 100 ml
sugar 40 g
dry ginger 0.5 tsp
gelatin 6 g
For chocolate mousse
chocolate white 200 g
cream 33% (35%) (in chocolate) 80 g
mascarpone (or any cream cheese) 200 g
cream 33% (35%) 320 g
powdered sugar 40 g
gelatin 10 g

Cooking method

  • Carrot and mango cake
  • I experimented with different compositions and combinations. The result of this experiment made me and my family very happy, I share it with you.
  • I made a cake with a diameter of 20 cm.
  • For biscuit and jelly, I used a mold with a diameter of 18 cm
  • For biscuit eggs (if eggs are not large, take 2 pcs + 1 egg white), beat with sugar until firm white foam. Nuts (any, except cashews, I took in half almonds and walnuts) to fry, chop with a knife. You can also grind in a blender, just adjust so that the grind is not very fine, we need pieces of 3-7 mm.
  • Combine sifted flour, spices, baking powder and nuts.
  • Carrot and mango cake
  • Lead flour mixture into eggs, stir with hands.
  • Pour in oil, stir.
  • Chop carrots in a blender or grate on a fine grater

  • Add carrots to the dough, mix.

  • Bake in a preheated oven at 180 degrees without convection for 40-50 minutes (focus on your oven) until a clean speck.
  • I want to note that this biscuit turns out to be so tasty, moist and aromatic that it can be baked in the form of a cake and eaten just like that without any fillings. From the specified amount of ingredients, a cake is obtained 3-4 cm high and 18 cm in diameter.
  • I cut it into two cakes and used one layer in the cake.

  • The second one can be frozen until next time, but I did not succeed, as those who wanted to try it immediately ate it.
  • There are two ways to make carrot jelly.
  • 1. Boil carrots and chop until homogeneous puree. Then the finished jelly will be homogeneous.
  • 2. Chop raw carrots in a blender or grate on a fine grater. With this method, there will be blotches in the jelly, and I like this method more.
  • So, I chopped the carrots in a blender, mixed with sugar, mango puree and water, added a cinnamon stick, anise flower (star anise), a pinch of nutmeg and ginger powder. You don't need to add spices, but they really set off the taste of the finished product, giving it aroma and piquancy. Boil everything for 15 minutes. Remove the cinnamon and anise. Dissolve the presoaked gelatin in mashed potatoes cooled to 60 degrees. I use Evald Silver sheet gelatin
  • Pour the mashed potatoes into a mold 18 cm in diameter and freeze

  • For chocolate mousse Heat 80 ml of cream almost to a boil and add chocolate, stir until smooth and cool
  • Soften the cream cheese with a mixer at minimum speed, mix with chocolate. Dissolve the presoaked gelatin in a microwave oven or in a water bath (do not overheat!) And add it to the chocolate cheese mass. Whisk cold cream with powdered sugar until soft peaks and mix with chocolate. For the scent, I added another 50 grams of baileys. The mass turns out to be quite liquid.
  • Assembly
  • Pour half of the mousse on the bottom of a silicone (or detachable, lined with a film) mold, put frozen jelly on top

  • Pour the remaining mousse on top, put the biscuit, drowning it in the mousse so that the surface becomes even

  • I increased the shape with acetate foil, because the cake turned out to be about 10 cm high.
  • Freeze the cake for at least 8 hours.
  • Cover with glaze or velor.

Note

A few nuances:
one.if you use sweet carrots and / or want to make the cake less sweet, you can not add sugar to the jelly
2. the same applies to mousse, for lovers of very sweet, the rate of powdered sugar can be increased, for those who love unsweetened - remove altogether.
