Pancake recipes - sea. But there are the most beloved ones. These pancakes were baked by my grandmother. They prepare simply, but their taste is wonderful, deep. The filling can be any non-liquid.
But the most delicious stewed cottage cheese rolls.

Stewed cakes with filling
The dough is very easy to make. We take a glass of flour, add an egg, milk, salt and sugar and pour in hot boiling water. I knead a double portion at once.
Stewed cakes with filling
So, pour boiling water into the dough with constant stirring. I take about a glass per serving. But smaller is better first. As flour is different and the result can be very different.
We look if the batter turns out too thin. You will always have time to add boiling water. But remember that we need the thinnest and most delicate pancakes. You can't do that with a hard test.
Stewed cakes with filling
Therefore, the dough should not be thick, but as in the photo. We set the bowl of dough aside. For about an hour. This procedure is required. I sometimes make dough in the morning and put it in the refrigerator. And in the evening, after work, I bake some leaflets.

Carefully cut the peel off the orange. Thin, no white layer. Fill with about a glass of water and add sugar to taste. I add 2 teaspoons. But you can do more. We put it on a small fire. Remove the foam from time to time.

Soak the poppy.

Grind the cottage cheese. If it is dry, then you can add sour cream. Throw a little vanillin into the cottage cheese. We mix.
Stewed cakes with filling
Add poppy seeds and honey to half of the curd.
Stewed cakes with filling
We mix. Already yummy turned out. But we won't eat it just like that. We use it as a filling.
Stewed cakes with filling
We get the zest from the syrup. Cut it finely and add it to the second half of the cottage cheese. We mix. Both fillings are ready.
Stewed cakes with filling
We heat the frying pan, grease it with oil and start baking pancakes. They are the most delicate. Therefore, we turn them over when a golden crust forms on the underside. Here in the photo you can see that the pancake is already well fried on one side. You see - the edge and in the holes you can see the roastiness?
Stewed cakes with filling
Stickers should be thin and delicate. Here you can see that the pancake shines through, but soft. This is because there are few eggs and the dough is brewing. Sugar, I put a tablespoon. It is sugar that is responsible for the beautiful thin fried crust.
Stewed cakes with filling
Pancakes can be rolled up in different ways: with a straw, in an envelope, triangles, etc. I like the latter method, although my grandmother made tubes, and cut them into 2 parts.
I spread the filling on half a pancake. I'm folding the pancake.
Stewed cakes with filling
I always put a pancake on the bottom of the mold. Granny put the patches directly into the frying pan. With my method, a pie is obtained, and with granny, you can eat individual pancakes. So choose for yourself how to shape. This is not reflected in the taste.
Stewed cakes with filling
The next step in my shaping: we spread the filling on a quarter of a pancake. We turn off again. The first pancake is ready. Next to it we lay out three more such triangles.
Stewed cakes with filling
Generously grease the pancakes with estimated, mixed with sugar.
Stewed cakes with filling
Cover with another pancake. I remind you - Granny didn't do that. Lubricate it with sour cream and sugar. Then lay out another layer of filled triangle pancakes. Lubricate with sour cream.
Stewed cakes with filling
Put a pancake on top. Grease with sour cream again. This makes 4 servings. But if someone thinks the pie is thin, then you can make a few more layers. We have just two pancakes per serving. You can alternate pancakes with a filling, or you can stack with the same filling on top of each other. My husband likes sweeter dishes, so I pour him a spoonful of orange syrup on top.
Stewed cakes with filling
Preheat the oven to 180 degrees. We put the patches there. We immediately change the temperature by 70 degrees. Do not open the oven anymore. Pancakes languish for 2-3 hours. After that, you can already eat. Can be served with sour cream, jam, honey, etc.

They are delicious and warm and cold. They don't look like regular filled pancakes. The difference is the same as between regular and baked milk. A deep creamy taste develops. And the consistency of the pancakes becomes different. Even more tender.
In general, these leaflets should be tried to understand the difference in taste.
Stewed cakes with fillingAnd what I like yesterday more than fresh. Pancakes are more saturated with filling. And if you fry the slices from all sides to crust in butter, then there are simply no words how delicious !!!

Bon Appetit!!!

Note

Baba Manya prepared these handcuffs for me. In the oven, they turn out to be even more fragrant and tasty. But they are good in the oven too!
Granny made many different options. Poured both sour cream and butter. I even made lenten patches. No eggs or milk.
But I have always adored it with cottage cheese, poppy seeds and honey.
Poppy grew up right in the garden. They sowed it mainly in the flower garden, and there was also my children's bed. There, my grandmother and I planted peas, turnips, early carrots and poppy seeds. The bed on the sides was edged with boards. Small, about 1x2m. When I was very young, the whole process of caring for plants consisted of planting, occasionally watering from a watering can and, culminating in harvesting. How many positive emotions there were! How many words of praise have I heard !!! And of course my carrot was the sweetest and the turnip was the biggest !!!
As I grew older, I was trusted with weeding, loosening. So my grandmother taught me to the earth. Moreover, my bed was always the most beautiful and cleanly weeded out. Not because I constantly looked after her, but because my grandmother was doing part of the work early in the morning, when I was still sleeping. But so that it would not be striking. And I had only a little to finish.
During the day, my grandmother boasted to her neighbors that I had "green hands" and that everything was growing by leaps and bounds, but tasty and fruitful.
Oh, how it inspired me!
And I ran to work on my garden.
And already when I became a schoolgirl, the work in the garden was not limited to 2 square meters. And I have already helped more. And she herself was called. Nobody forced.

Now my grandchildren have their own beds. I don't know if they will then love to work on the ground, but so far they are doing it with pleasure, in a race. And I, too, like a grandma, am cunning and I do part of the work until they see.

It's a pity that now you can't sow poppy seeds ... Oh, how delicious it was to rip the box, pour its contents into your mouth and chew for a long, long time.

But I still make my grandchildren with poppy seeds. It's good that it's on sale.
This year, for her granddaughter's birthday, I wanted to bake a cake. I asked her what she wanted. She replied that with pancakes and poppy seeds.
-But it's not cake.
-Cake. I want it.
So I had to bake the patches. And put candles in a real cake, and in a pancake.
And the funniest thing is that the kids ate everything, but only half of the cake. One mother even took the recipe for the patches. Her child does not like cottage cheese, but here he ate two portions.

Irina, what an interesting story from my childhood / I immediately remembered the village and the granny / to such delicious napilis. I took it to the bookmarks, I will definitely bake it for my granddaughter. Thank you!

Myrtle, Natalya, thanks for the tip, but I'll tell you a secret: a story is a trifle. The main thing is the taste of the patches. These are not commonplace pancakes with a filling.
It seems - a little subtlety: put the stuffed pancakes in the oven, imitating the cooling oven. And the taste changes dramatically. Enriched.
I try to bring the best recipes of my family to this site.

Irina, that's the whole point. You remember the taste of dishes from the Russian stove all your life, so memories flooded. Therefore, I have no doubt that these patches are delicious.
toffee
Natalia, but the taste of dishes from the oven is different. But even in the oven, it can be as close as possible to that one. It's just strange that not many people are taking advantage of this opportunity now.
Literally one stroke and the dish will become not an ordinary one, but a small masterpiece.

olgavas, Olga, thank you!
I prepared these patches on Wednesday for my son-in-law, when he came to my pancakes. By special order, so to speak.
They are also good because everyone can please. Each has its own filling - and everyone is happy.

Excuse me, but when is milk added or is it boiling water? I read it twice, I don't understand this moment ..
toffee
Sorry, I missed the milk in the description .... Corrected.
We take flour, eggs, milk, salt, sugar. We mix. Then pour hot boiling water there while stirring. Fill it in portions. First, half a glass. And see what kind of dough. If it's thick, then add more.
The thinner the dough, the thinner and softer the pancakes. But it's harder to work with him.
I have already adapted. But if such pancakes were not baked before, then let the dough stand, bake the pancake. If it easily turns over and is thick, then try adding boiling water more.

Thank you. Let's try to bake.

Stewed cakes with fillingI still can't convey my creation. Made with straws. Delicious.

Oh, what a beauty! I love these pancakes. They are good both hot and cold.
And in the post I make a slightly different option: with poppy-fruit filling, without cottage cheese. I don't put the egg and milk in the dough. I brew it with boiling water. It turns out delicious too.

Irina, and what does it give?

Don't add vegetable oil to the dough at all?
toffee
When the dough is resting, it becomes more stringy and sticky. The pancakes will not burst when baked. They are the most delicate and thin.
I don't add oil. But in principle you can.

Previously, I put only homemade cottage cheese in the patches. And today I tried it for the first time with a purchased one. It is not cheap, grainy. The cat seemed to be eating.
Nalistniki turned out to be very tasteless. The grandson refused to eat, although he used to love them very much. I decided to try it. And the truth is byaka. Cottage cheese is not like cream, but hard-hard. So - don't make my mistake. Take only proven cottage cheese.
