Ingredients

Wheat flour 450 g
Whole grain flour 50 g
Curd whey (milk / water) 290-300 ml
Olive oil 3 tbsp. l.
Garlic 2 cloves or 1 tsp dried
Spices 1.5 tbsp. l.
Chopped walnuts 50 g
Sea salt 1.5 tsp.
Cane sugar 1.5 tbsp. l.
Dry yeast 1 tsp

Cooking method

  • Grind the nuts in a mortar or roll them with a rolling pin on a cutting board, finely chop the garlic or pass through a press. Pour whey (water + milk, you can just water), olive oil into the bucket, sift both types of flour on top (instead of whole grain, I used spelled flour), add nuts, garlic, herbs, carefully make three depressions in the flour in different corners of the bucket ( so that the indentations do not reach the liquid) add sugar, salt, yeast to them (I skip this stage, I pour the yeast into the dispenser, sugar and salt where they were poured, were poured there). Basic mode, medium crust (I set it to dark, well, mine like this), XL size, Panasonic SD-ZB2512 bread maker. The gingerbread man is controlled, because of the nuts at first it is a little shaggy, but during the kneading process you can add either a spoonful of water or a spoonful of flour, depending on what kind of flour.

Somewhere, once I read a similar recipe, in the process of "cooking-running" I came up with this option. The smell is awesome. The taste is also interesting. I use herbs and "Caucasian seasoning" and "Khmeli-suneli", and I just mix basil, parsley, fenugreek, cilantro, dill, etc. Garlic is suitable both fresh and granulated.

the smell during kneading and baking is awesome, garlic with spicy herbs. but the taste did not live up to expectations. on the buters it will be.

The taste can be adjusted for yourself. I somehow made it with honey and it boiled more salt, the taste turned out brighter.

Nice tasty bread! Nuts feel good, but for some reason garlic is not very good. I put both fresh and granulated (I like garlic, I always put more), maybe the Provencal herbs interrupt the aroma of garlic ... The bread does not crumble, the crumb is pleasantly elastic. The roof cracked a little, I felt sorry for the water)))

Great recipe. After the change, I use it every day. The wife is delighted.
My changes
yeast 1.5 tsp
25g pumpkin seeds, 25g sunflower
The herbs were replaced by a set of herbs "Greek salad". 1 tbsp. spoon (IMHO, you can do without herbs at all.)
Garlic only fresh.
Serum and serum only. All other variations impair the taste and rise of the bread.
