Cooking method

  • 350 gr. Rye sourdough. (Classic recipe 1: 1 flour water, 3-4 days)
  • Rye flour 200 gr.
  • Spelled flour (wheat) 200 gr.
  • Rye malt extract 50 gr +100 gr. Hot water.
  • Sugar 2 tbsp. spoons
  • Salt 1.5 teaspoon
  • Vegetable oil 2 tablespoons
  • Water 200 gr.
  • Kneading on mode 23 (dough for dumplings), then remove the mixer and with wet hands give the dough the shape of a loaf.
  • Then we set the mode 9 rye bread and after 3 and a half hours the bread is ready.

Note

The kneading time is simply added to the raising of the dough; the kneading does not take place. This is to simplify the procedure. You can just wait for the dough to rise and turn on the baking mode for 1 hour, but this will increase the cooking time. This recipe is made for workers. I manage to bake this bread after work from 19.00 to 23.00
