Ingredients

Dough:
Wheat flour
(or 415 g of premium wheat flour,
60 g corn flour
and 45 g of 1st grade flour)
500 g
Water 350 g
Salt 10 g
Fresh yeast 10 g

Cooking method

  • Crumble the yeast into lukewarm water, add flour, salt, knead until plastic and soft dough. Let it swell for 20 minutes, pour it out on the work surface, which is well sprinkled with flour, stretch and fold several times, form a good bun, like on hearth bread and put it in a bowl warm. When the dough has increased 2-3 times, carefully dump it again onto the floured work surface. Keep it as low as possible so as not to release all the air. Stretch it into a rectangle, sprinkle generously on top with wheat or corn flour and use a scraper to cut it into 4-6 pieces (as you like - more or less land mine). I divide by 4, so I like to mold the shape of a leaf.

  • Preheat the oven to 250 degrees.

  • Now we give each land mine a leaf-like shape. The top "nose" of the leaf is the corner of the rectangle that was in the center when cut. The lower part of this blank is rounded, so molding is convenient. Stretch it a little, make through cuts (one central and a pair to the right and left of it). It is better to make an incision by pressing, and not by cutting movements. When cutting, the dough stretches behind the knife, so it is better to take a scraper or an ordinary metal culinary spatula and press these slots into it.

  • Transfer the cakes to a baking sheet covered with parchment, cover with a towel, let the proofing for 20 minutes and bake at 230 degrees for 12 minutes with steam.

This is a very simple recipe for very simple tortillas from Richard Bertinet's book "Own Bread".
Land mines are simple bread, the great-great-grandson of unpretentious flour cakes once baked by every hostess. Its advantage is simplicity, compatibility with a variety of filler products and a large area of ​​the most delicious thing in bread - a fried crust. It's nice to give each of them to a plate of steaming soup on such a flatbread.
And one moment. This is a basic recipe. It can be successfully supplemented with olives, sun-dried tomatoes, dried herbs, bacon, etc. - to your taste. Land mines can be made with rye or whole grain bread with olive oil. So far I have tried only pure wheat, with corn flour and with the addition of herbs and olive oil.

Richard Bertine's recipe. And they have sticks. I twisted them diligently, laid them out on a baking sheet, and they unwound back. I was angry and spat. And it was only when I re-cooked that I got the idea to fold them into rings and link them. So they don't get promoted.

Variations are allowed in the dough, I tried them (320-330 grams of water for 500 grams of flour and 1 tablespoon of mustard or olive oil)

In addition, for the dough recipe, we need about 50 grams of sesame seeds. Pull out the finished dough and roll it into a rectangle, about 0.5 cm thick. Sprinkle generously sesame seeds on it, press in with your hands and wrap a layer of dough on top and bottom. It's like folding a sheet of paper in three. You will get a rectangle of dough with a narrow side of 12-15 cm. From this narrow side, cut off strips about 1.5 cm wide, roll in sesame seeds, twist, while stretching in length, then fold into a ring and interlock the ends.Let it proof for 20 minutes, sprinkle with water and bake at 230g for about 10 minutes.

Instead of sesame, you can sprinkle whatever comes into your head - chopped olives, finely crushed sunflower seeds, herbs, etc.
