Cucumber tagliatelle linguini with eggplant and garlic sauce

Ingredients

Eggplant 1 piece 200-300 grams
Salt taste
Vegetable oil 1-2 tbsp. l.
Garlic 1 medium tooth
Cucumbers 3 pieces (350 grams)
Tomatoes 250 grams
Dill 2-3 twigs
Parsley 2-3 twigs

Cooking method

  • The preparation consists of two parts:
  • preparation of "sauce" of eggplant with garlic, which can be made the day before (in the evening, for example (or in the morning)),
  • and cooking, in fact, the salad.
  • 1. Cut the eggplant into pieces of 1.5 - 2 cm, sprinkle with salt and add water, after 10 minutes drain the water, throwing the eggplant in a colander.
  • Heat vegetable oil in a frying pan, fry, stirring, pieces of eggplant.
  • 2. While the eggplant is fried, chop the garlic (preferably very finely into a paste).
  • 3. Put the fried pieces of eggplant in a bowl, cool slightly, add chopped garlic, mix and set aside to cool.
  • So the "sauce" is cold and almost ready.
  • Further…
  • 4. Chop the parsley and dill (tops), add them to the fried eggplant with garlic, mix gently.
  • 5. Cut the cucumbers on a spiralizer (part can be 5 mm, part 9 mm),
  • put in a colander, salt (you can also cut it with a knife (more on this in the notes)).
  • 6. Cut the tomatoes into slices of about 3 cm, add the sliced ​​cucumbers to them, mix.
  • 7. "Sauce" of eggplant with garlic and herbs add to chopped cucumbers and tomatoes, mix gently.
  • Add salt to taste.

Note

Firstly, of course (and above all), cucumbers for such a salad can be cut with a knife in relatively large pieces-quarters (cut washers 1.5 - 2 cm wide, cut from a cucumber, into 4 parts). After all, this is how I initially prepared this salad (after trying its recipe in one of the establishments (so the idea is not mine, but I wanted to share it)).

Secondly, when I was thinking about the possibility of adapting my beloved Gemlux GL-SR-1003 to this recipe, I hoped that I would make eggplant spirals, but, alas, it did not work out.
Eggplant is not the kind of vegetable that can be cut into spirals from 2 mm to 5 mm wide (even in advertisements of various types of spiralizers, apparently, they do not risk "spiraling" so much) ...
Therefore, cucumbers in the form of "linguini-tagliatelli" went to the spirals (and the result pleased me).

This "sauce" of eggplant with garlic is a good (and, most importantly, healthy!) Alternative to mayonnaise and sauces similar to it.

By the way, you don't have to worry about the smell of garlic, it is almost invisible (as if garlic oil was added to the salad).

Spiralizer, as already said, in this case, is not required,
but since I got it, I decided to try to make this salad with it,
