Ingredients

Milk 3.2-4% 225 gr.
Salt 1 tsp
Sugar 2/3 tsp
Refined sunflower oil 1.5 tbsp. l.
Buckwheat flour 65 gr.
Wheat flour 195 gr.
Yeast 0.6 tsp
Sesame seed 2 tbsp. l.

Cooking method

  • Put all the ingredients in the bucket in the following sequence: milk (from the refrigerator), salt, sugar, refined sunflower oil, buckwheat flour "Garnets" and wheat "Makfa", fast-acting yeast "Saf-moment" put on top of the flour. Add sesame seeds during the second batch when the breadmaker beeps.
  • Program 2, "French bread," cooking time - 4 hours, crust color - medium, weight - 600 gr.
  • I take out the bread 10 minutes after the sound signal of the end of the bread machine. The result is a 460 g loaf of bread. The bread comes out quite high, with a pronounced buckwheat taste, sesame aroma and a crispy crust.

It is advisable to check the flour-liquid ratio. You have 260 grams of flour, 247 ml of liquid. This is almost 100% flour and begs the question.
There is a lot of liquid, and at the same time, the photo shows that the crumb of the bread is "tight", dense.
What is the reason for this mismatch in the flour-liquid balance?

Thanks for the comments, Admin. I will look for my mistake in the mismatch of the flour-liquid balance. I measure the liquid and flour on the scales. Change the scale. I noticed that with a decrease in the amount of buckwheat flour and rejection of sesame seeds, much less water is required.

I am waiting for comments and new bread recipes from the owners of Delta DL-8007B. I hope they exist.
